Can a Pellet Grill smoke a brisket as good as a Stick Burner? Welcome to BBQs biggest war.
In this video I share the results of my latest experiment where I cooked two briskets side-by-side against each other, at the same temperature, seasoned the same, and for the same amount of time to determine if a Pellet Grill can go toe-to-toe with a Stick Burner. Now…which smoker do you have your money on?

If you want a challenge, try assembling one of these grills kzbin.infoUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . I am a technician by trade and the technical instructions were easy to follow. No reading, just pictures and diagrams. You assemble everything in 5 steps from the bottom up. Step #1 - Assemble 4 Legs and Wheels; Step #2 - Add the Front Cover and Cross Bars to support the frame; Step #3- Assemble the Burner to the Lower Grill Housing and install the knobs; Step #4 - Install the Side Burner and side shelf; and Finally Step #5 - Install the Upper Char- Broil Lid, Cooking Racks, 3 Burner Railings and Lid Handle. That's It and you're done in about 2 hours and 40 minutes. You have the option to pay for assembly after making the purchase - I would strongly suggest that you take it if you don't want to be bothered with this challenge. The only tool I used was a Phillips head screwdriver and a standard pair of pliers. The grill cost a little more because of the side burner, but this is what makes the grill so versatile and popular among backyard grillers. Have fun and enjoy!

I’m a Alabama boy and being military have lived all over the country and tried all different kinds of BBQ, and I can say with no doubt you Texas boys have brisket down to an art form. Best in the country, IMO. While I feel differently about bbq spare ribs, pulled pork, baby backs, chicken, etc. (I think we do all those better down South) there is no question in my mind that Texas brisket is the best on the planet. Thanks for an excellent video, y’all keep on keepin’ on. 👍

I've used stick burners for over 20 years, nobody was more against pellet smokers than I was up until about a year ago when my cousin bought a portable one for one of our cabin trips. I was really impressed with how it cooked, but more so that I didn't have to get out of the river early to get the pit started up. Since then I've bought a pitboss Lexington model for the backyard patio, plus a tabletop portable one for the cabin. With a wife and kids, plus working about 50-55 hours a week it's harder these days to consistently use the old pit (Sandy is her name). Plus the prices for a bag of pellets are very cheap. I'm a stick burner at heart and still like to fire it up every now and then. Especially in the winter time. But I've found there is a place in the BBQ world for pellet smokers. Times are changing and it's adapt or die (maybe a little overboard with that saying). Anyways, keep up the good work and making these awesome videos. You couldn't said it better. My friend is been a hardcore stick smoker as well. I've been around him while smoking. One day I decided I wanted a smoker. Did my research on both and decided on the pellet. He asked me about it. I told him my experience with it and he went and bought a pit boss 850 pro. Been enjoying it ever since. Cheers from Texas too

I just got my Lexington yesterday and can't wait to get a smoke session in! My work schedule isn't as busy as it used to be, but I have 3 young children, so mainting a fure for 12+ hours at a time doesn't sound fun right now.

Awesome video. When it comes to smoking I'm a rookie. I bought my first pellet grill last spring and man I was amazed at how well everything turned out. For me the reason I the pellet grill was because I don't have any experience with stick burners nor do I have access to the proper wood. The pellet grill has given me a new hobby so much that I just recently bought bigger pellet grill. Everything tastes so much better

You can add small wood chips to the pellets (50/50 ratio) to get the same exact smoky flavor as the stick burner grills. Fuck babysitting a brisket for 12 hours with a stick burning grill. Just throw a brisket in a pellet grill at 9 PM & forget about it until 9 AM, then take it out & throw it into an Igloo for a few hours until you are ready to eat it. Perfect every time. Super easy.

Loved your brisket cook comparison!! I have both a LonestarGrillz offset and a Traeger and they both have their place as you said due to changing circumstances. But I'm hardcore stick burner in the end!!

Great video! There is nothing like the art of a long smoke on a stick burner. I have an electric smoker that I use. But I use it for convenience. I’ll set it up to smoke overnight, then baby it in the morning for the second half of the cook. Texas here, and true, we do have the BEST bbq. Thanks for all of your hard work on this video.

Started on charcoal, moved to gas (with a smoke wood chip box), then to a RecTec. Having cut WAY too much wood growing up (think several 5 ton dump trucks a year), I like the pellet grills. It's a nice blend of convenience & results. I even rotisserie chickens on it. Hope to hear your thoughts on the gravity feed charcoal grills sometime.

Great video Arnie very good experiment I’ve also done the same thing all though the pellet grill can cook a pretty good brisket I still lean more towards the stick burner I think the taste is amazing 👍🏼👌

I love playing with fire and dead things, been doing it a long time. I prefer real wood, playing with fire is the fun part. The electric's are easy and do a good job, but, fire doesn't need a plug in and/or get hot enough. I flame grill on a kettle and cook pit bbq on it all the time. I either, smoke all day long and move the fire under the grill and do veggies, taters and bread or just build a hot fire to grill steak, burgers, seafood, etc. I really like the pellet's ease of smoking fish, birds and jerky, I like it's precision. I use the big propane burner on my pellet stove a lot, probably use it as much as the smoker. Great video.

I use both and decide how to cook depending on the situation. The pellet is much easier, no doubt but the stick burner does have more smoke flavor. They're both quite good though! Great video!

Smoke Daddy (I am not affiliated), has a product called, Heavy D stick burned heat diffuser replacements. It is a heat diffuser, with stick burner chambers. I can guarantee stick burner flavor, with pellet grill ease. I was a long time stick burner user, until I got a bit tired of the fire maintenance. So, I bought a pellet smoker, but was constantly disappointed by less smoke flavor. Until I bought a Heavy D from Smoke Daddy. I am now getting 100% stick burner results, with pellet smoker ease.

I like my pallet grill for most of my cooking, I use a Weber when cooking steak, I use propane when I have everything wrapped in foil.

Arnie, this is a great video! I’m a stick burner fan, but have cooked on my Recteq for the last year. I too think the stick burner is a notch ahead of the pellet grill. I’m curious what type of pellets you used on the Recteq? I’ve noticed pellets can make a huge difference. Thank you sir!

Great video. Its personal as you stated and what you prefer. I just got my first pit and chose a pellet grill but i got arguably the best pellet grill out there to get as close to a stick burner as possible. Got a lone star grillz and its beyond phenomenal. Can't believe how good the meat comes out and both my wife and daughter absolutely love it. They get excited when i do a cook. Someday i may get a stick burner just to have and try. I feel its using the best pellet grills with premium pellets that get you as close to a stick burner as possible. Me i love putting a brisket on at 10pm get to bed and and wake up refreshed and carry on. And have a great brisket for dinner that evening. Just what i prefer at this time. Great video

I use to put down the pellet smoker for years, then I bought one. For the convenience you can't beat it and it is very close in taste. But just like you, I will sit down and burn the sticks for 14hrs here and there. Love all types of smokers for sure! Great video

I don't have the time or space to make the investment in learning to use a stick burner, but have been enjoying home smoked meat on a pellet smoker for over 10 years now and just ordered a new one with a PID controller and WiFi to make it even easier and less time consuming. Knottywood pellets do a great job for creating bark. I know you Texans like oak but where I live we use almond since it's plentiful. Mad scientist did a good video on it. Telling our best kept California bbq secrets. Great video, I learn a lot watching your channel.

great video Arnie, great context. Everybody needs to keep in mind that todays "stick burners" are the "pellet smokers" of their day. Tank smokers are not the original pits.....they too were developed for their convenience. live and let live boys and girls....we all love bbq.

I got into stick burners due to me having high blood pressure and hemorrhoids > ( yes bad to say but the truth and part of life ) Salt is a no no !!! And pepper is a killer !!!! At my age way over 50 I love to eat but I have too be very careful . I have been running an offset for about a year now . Learned the hard way on my own !! But running a stick burner I get lots of flavor with the wood smoke and less problems in health area . I would love to see a video on wood flavor and no spices or seasoning . Great channel and Cheers from Murrell's Inlet SC !!!

I agree both can produce great bbq if you start off with a quality cut and seasoned just right. I get a smoke flavor I’m content with if I start off on low temp on a pellet cooker and spritz often before cranking the heat.

I'm retired and the stick burner makes more sense for me. I Use one of the David Klose Pits (48" x 20" w a 1/2" 20" burn box plus some extra stuff. While planning, we always pay a lot of attention to the weather. Finally, as a local, I've been able to find pecan in lieu of post oak or whatever it was.

Pretty fair comparison. I opt for a GMG most of the time. Comparing offset and pellet is like comparing a charbroiled steak like a PK grill to a pan seared. Both are delicious. Both can develop a great crust. Different technique will have a different result. My pellet grill turns out great BBQ but it’s not quite the same as an offset. (And don’t get me started on drum smokers.) But I think I’ll start a brisket fat side down (3-4 hrs) on my Pit Barrel and then transfer to my GMG. Great stuff AT.

I have a stick burner and just don't have the time to use it very often. I got a pellet grill and use it more than the oven in the house. It is a tool and works great for a lot of things. The only thing it can't do worth a flip is boston butt steaks. You still need a direct heat charcoal for that. I am a heavy smoke guy and prefer the stick burner. The guys not really into BBQ and woman seem to rather the pellet smoker. I use a smoke tube on mine just about every cook. Seems to help a lot.

I wish I was your neighbor! I've never tried a stick burner but have always been intrigued by them. I've always used charcoal for decades....got a treager 2 years ago and I'm really pleased with it. I'm not quite sure if i can manage the temps with an offset. Seems like you're gonna have to be very dedicated to keeping it in range. I'm not too busy for one I'm just lazy. Great video brother! This is seriously the best video I have ever seen of the side by side comparison. I used stick burners for 10 plus years until 2 years ago and got a pellet. The first few cooks I hated the product off the pellet it's not even close with the flavor. As time went on and the ease of use and the steady Temps with the set it and forget it ability it wins esp in the south during the summer when it's 98° with the humidity and feels like 109° and you are producing more sweat than smoke. But still to this day, even though I use the pellet at least 3 times a week and have grown accustomed to what it can do. The stick burner will always be king. At the end of the day, if you and your family like the food, that's all that matters. I don't get the stick vs. pellet like I will never understand the bow hunters vs the gun hunters it's pretty much the same.

I have a pellet grill and a Weber Smokey Mountain..Weber gets it pretty much every time. Wood over charcoal smoker…

Great video! I cook on a pellet smoker and totally agree a stick burner gives a stronger smoke flavor. The science makes sense and totally backs it up. But worth mentioning, for many people it can be a bit much and the pellet smoker gives a milder flavor that's preferred. I have to chuckle a bit at the huge war waged on the subject. I love your comparison to the easy bake vs the hard bake oven. I love my pellet smoker but soon retiring and with more time on my hands would love to try my hand at at offset.

Get a Traeger … has a Supper Smoke feature …. Quality of Stick Burner and Pellet grill makes a lot of difference… I WAS a dedicated Stick Burner until I got a Pellet smoker and learned how to use it ….

My brother in law has a RecTeq grill and he uses the extreme smoke setting all the time. My briskets on my PitBoss PB850 Pro seem to lack any smoke flavor even when low. I wrap in foil when its time. His brisket had actual smoke flavor that I am super jealous of. I haven't tried butcher paper or smoke tubes yet but just the fact that his grill can impart more smoke flavor out of the box blows me away and makes me wish I saved up a little more to get a RecTeq.

Totally agree on the RT doing a great job on smoke flavor. I usually run mine at 200 over night and wrap in paper in the morning crank to 250 and resting brisket by noon. i have never ever felt the need to use a smoke tube.

Great comparison video. Born and raised in Texas and know my around a stick burner. Yes, there is something very special about that stick burner taste. However, I love my Recteq! It’s a cleaner taste, and the fact I can smoke overnight with virtually no worries is amazing.

I don't really care for the pallet smoker I bought an expensive pallet smoker and it's not the same for me I'm more of a stick burner offset smoker kinda guy the pallet smoker it just doesn't have enough smoke flavor for me but Great video and good advice for those who never use offset smoker

I've used both and compared briskets. No comparison, the Stick Burner won hands down on flavor alone. Granted the Pellet grills are easier but like everything else in life, Hard work pays off!

If I'm to lazy or don't have time to run my stick burner I like to use my drum smoker, set it and forget it. Brisket at 225 in a drum is pretty damn good but nothing is better than stick burner brisket. Awesome video!

I learned to cook on stick burners. It made me learn how to regulate air, temperatures. Especially smoking several 20+ turkeys. But yes pellet smokers are EZ BAKE OVENS. I still prefer sticks over pellets. Great debate!!

I've gotten to old for those 16 to 18 hour smokes on my offset. These days I'll smoke the brisket for around 8 hours and then move it to the pellet pooper to finish. This way I can get a little shut eye with the remote on my nightstand to give me a heads up if something isnt kosher. This works great for me since you get that good smoke from the offset and the precision of the pellet pooper when the final temps are so important. I found that the pellet poopers just dont have that quality smoke you get from the stick burner. Just like using kiln dried splits,they're just to dry. I'd rather have a side fire to get the splits going that still have a bit of moisture in em because they impart a much better smoke profile.

I hear so many people give crazy one sided descriptions, saying that they can't taste anything smokey from the pellet smokers, giving me hesitation if it's worth getting a pellet smoker. I recently tried some smoked turkey from an electric smoker, which people say is even milder flavor - if I thought that was amazing, I'm sure I'll be more than happy with a pellet smoker and not feel like I'm making huge sacrifices.

I prefer a stick burner because it get me out of the house and I'm more involved with my food. Stick burners are relaxing. I smoke a lot of lamb, goat, and deer. I do have a portable pellet smoker it has occasional problems (auger, control board, software, etc) I even bake pies, bread, and beans in my stick burner. Thanks for a great video.

I run a stick burner. To me, it takes a skill to run one when you consider all the variables. And I enjoy the challenge that comes with it, there is a sense of pride at the end. When that BBQ if full of flavor.

Totally agree with you man, BUT not everybody has a home and or property to have a stick burner and the amount of wood to run one on a regular basis. I grew up on stick burners and grills but still love my pellets grills for what they can do with little effort and still make great bbq, damn close to the sticks

Both great looking briskets!! Unfortunately I have neither a pellet grill or stick burner, just a simple kettle. However, the pork ribs you made on the kettle in another video came out looking great, so I was curious if you have smoked a brisket on the kettle? If so, how, and were your satisfied with the results ? Thank you for taking the time to explain your videos, I enjoy watching.

Arnie, I've always just grilled beef skirt for the most part and chicken breast, thigh, fish, but I am learning from you new stuff. For example, I never knew you could use the charcoal you didn't use for next time just shut it down. Indeed you are a professional and you make Texas proud. God bless.

you should try the Pitts and Spitts pellet grill with the smoke cage. It combines pellets with hardwood chunks. Awsome!

Amen brother, Texas has the best BBQ. I'm sure the stick-burner is going to make a more authentic and probably better brisket providing that everything is done right, by a pitmaster (which I am not). I think using a good pellet smoker is probably going to give the occasional smoker more consistent results--and he or she can always upgrade to stick-burning. Thank you for putting all the love into this head to head competition. I believe that you are a stick-burner snob, and if you say the pellet brisket is almost just as good, then I'm sure it's good enough for me. BTW, I had brisket in San Antonio (Texas Pride), Austin (Salt Lick), Taylor (Louie Mueller's), and Dallas (Pecan Lodge). Pecan Lodge was my favorite; but Texas Pride was my first, and I couldn't believe how tender and delicious everything was. It changed my life and I think it's rare to find good brisket outside of Texas unless you can do it yourself. To everyone who thinks using a smoker is easy, or cheating, you still have to buy the right brisket, trim it properly, season it properly, cook it properly, wrap it at the right time with the right paper, and push through the stall, and let it rest.... so don't think it's easy to make a killer brisket just because you're using pellets.

I have three drums lol, yes very very good but a little different since they have a grilled flavor blended with smoke flavor, good stuff.

I've had both. For me, a pellet grills have a bit of a twang that I can't get over. Stick burners have a more of an authentic BBQ taste but take longer. I've recently added a thermo controlled fan to my smoker, which does the same. Takes longer but not as much babysitting.

Harry Soo is a world class & champion BBQer. He uses a Weber Smoker Mountain. He says it's about the BBQer not the smoker. So for Mr Soo he uses charcoal and wood chunks. Save on wood and he used a temperature blower with Bluetooth so not as much baby sitting. But at home he says he uses a pellet smoker and monitors the cooking progress from the comfort of his home.

I really like both of the cookers. I’ll use the pellet in the summer and my stick cooker in the fall mostly. But yes you do get a better bark and smoke flavor on the stick burner. That is my take. Happy Qing!!

Although the "set it and forget it" aka, the Pellet Grills are on Huge demand, It does not mean that pellet grillls are in any way, "superior" to anyone other than "the lazy". There have been tons of back-yard as well as professionals in the bbq world that have tested both methods and most agree in the fact that you mentioned, "pellet grills do have their place", but according to 95% of the professionals, Nothing compares to what you get from an authentic, Real Wood fire flavor that you can only get from the long lived, tried and true results that you can ONLY achieve by using an Offset Stick burner style smoker. There are many reasons to use either or for sure so depends what you want to or need to accomplish that day. i think everybody should have both and a coupe of drums and a couple of open fire grills and a couple Webers and , and , and ;) tnx
