Thank you, I have a electric smoker that is a little too small for what we want. Was looking into a horizontal for the ability to drop a whole rack of ribs or brisket on it. However hearing these don't smoke as well as a vertical I will find a vertical that I can hang my ribs and brisket from.

For me it is a no brainer, Pellet smoker grill wins because you can do more with it. I recently got the Z-Grills 450a 2020 revised version and while I haven't even opened the box yet I know I made the right choice for me.

What I don't like about the Pit Boss digital smoker ? Is the digital controls are at the bottom of the smoker ! I bought an East Oak smoker digital with probe and remote . And the digital controls are at the top of the smoker . With cover and rolling stand $300.00 ! AMAZON 😋

Excellent question and I don't have an answer for you. I tend to put meat in the upper part. I haven't done multi-layer enough to give you an answer.

My experience has been the opposite. Lower racks aren’t as hot as top ones. But the difference isn’t that big. It’s only hotter on the bottom when a new batch of pellets ignites and you briefly have a very hot fire at the bottom. But with the heat shield over it, and the water pan, the heat/smoke seems to rush past the bottom racks and then whirl around the top multiple times before exiting the chimney. This really getting around that top rack more.. That’s my theory because I have 3-4 meat probes going all at once at any given time and that’s been my experience monitoring them.. So I personally like to put the thinner pieces at the bottom with more space between them and the thickest pieces on top, and my longer cooks come out very evenly when chimney is more restricted.. Chimney wide open a grilling hotter, not as much of a difference.. 👍👍

So here's a question for the reason I am even looking at these smokers. How much heat loss do you get when opening the vert vs the horizontal? Do you lose all your cooking momentum when you open the vertical vs. retaining the heat with a vertical?

I have no "MythBusters" scientific data for you. But from my experience and best guess, I would say the heat loss will be about the same. In either option, you're opening an entire side of the unit (top or front). You'll see the temperature go down a bit on the panel. It's best to keep in shut as much as possible. However, I wouldn't say you'll lose all cooking momentum as it returns to temperature in just a few minutes. Hope that helps!

I just got a Z Grills Pellet Smoker. It maintains temperature like a champ and is perfect for long smoking sessions like Briskets and Pulled Pork. A big full rack, probably not. And if not, I just cut to fit. Most of the time I finish meat off in a slow cooker to retain the juices after several hours of smoking. I cut the meat to fit the slow cooker.

I have the vertical 5 series and I agree with everything in the video. My biggest frustration is the location of the control panel directly underneath the food chamber. It is so easy for grease to get on it even when just spraying down a brisket, and ash accumulates as it has to be brushed forward to be cleaned out. I like to slide out the tray to check my meat and all those drippings have messed up my LCD panel. The glass door looks nice, but after 5 hours of cooking, the glass is worthless and too hard to clean. Just a few things to consider....

Thank you, @ckellyarnold845! As far as smoking a turkey in a series 3, you can do a smaller one up to about 13lbs. Anything bigger and you might have to measure it first. The drip pan catches nearly everything and slides out for easy cleaning.

You're welcome, Bill. Thanks for watching and commenting. To your questions: 1) There are going to be temperature fluctuations with any wood pellet grill. Period. The way the pellets feed into the firebox doesn't always flow evenly. There's bound to be a little overflow. Not much, but enough to send temps from 225 to 300 for a few minutes. It's just like a small campfire. So, yes, I've had overheating now and then. Not fatal. 2) How high depends on your smoker. I think my Copperhead goes to 400.

@@PatrickSipperly Having watched yours and other videos I'm going to build an offset smoker and grill combo. The offset fire pit can provide hot or cold smoke and grill if needed but not at the same time. The smoker chamber will be vertical and joined to the fire pit via a pipe with adjustable baffle and a chimney with another adjustable baffle. The whole thing will be all welded together with wheels one end and handles the other. I'm going for multi purpose.

Thanks for making your video. I was on the cusp of purchasing a series 5 Pit Boss smoker, then you made me stop and think. The Austin XL looks good but it can't out grill my 22" Weber charcoal kettle and it can't smoke as good as a Pit Boss smoker. I didn't know about the series 3 smoker. When you said it was perfect for you and your wife you sold me. I am going with the smaller Pit Boss series 3. Thank you Patrick for making up my mind..lol So for my final outdoor appliances it will be a 22 inch Weber kettle, my 36 inch Blackstone Griddle(those are fun to cook on) and your recommendation of a Pit Boss series 3 vertical smoker. *I have both as well (and then some lol) and here is my take on it::* I too believe that you will get a better smoke flavour out of the Vertical than your Austin XL, but I just got rid of my big Austin because it was not producing as good of a flavour as my two Traeger Barrels are producing. I have a small Traeger 20 series heavily modified that works like a dream, grilling for 4 ppl, then i have a Pro 34 for bigger events/gatherings and a Pit Boss Copperhead Vertical 3 series (like in this video). Btw, I’m not a fanboy to any particular brand at all, I’ll take what ever I can get my hands on haha.. (apparently wifey said 3 is enough, had to get rid of one) My experience has been that the small 20 series Traeger will smoke everything in a very VERY similar way like the Vertical does: Slow, steady, some temp swings but an absolute beautiful smoke ring, great flavour. Literally very similar. But my Pro 34 is more of a “Grill”, though I haven’t tried the exact same recipes on the big Pro like in the vertical and 20. But I have NOT been able to get the same smoky taste as with the other two units (same with the Austin) I’m not sure if that has to do with barrel size or what, because they have same electronics and I use same pellets, temps etc.. The Austin was even more of a “Grill” than the Pro34, less Smokey flavour but had even better temp control and burned a lot hotter too... That’s been my experience with them over the past 3 years. I do like em all though for their different strengths.. Hence why I keep 3 on hand hahah.. The one thing where I’d probably challenge this video is that there are plenty of ppl “grilling” with their vertical Pitboss. Couple of mods and you’re off to the races. However you will be at a disadvantage, due to the layout. But ppl do grill with their verticals.. And that sort of brings me to the last point: you can not smoke a big flank or brisket on a 3 series vertical WITHOUT cutting it. It just doesn’t fit, unless you “hang it”. I’ve hung stuff, specially Pork Tenderloins, but I don’t like to hang beef, specially not heavy pieces like brisket as you are stretching that meat big time (maybe string it next time??). Anyway, in contrast, I’m able to fit a 14-15 lbs brisket into my small 20 series Traeger, and it’s been giving me an amazing brisket!! So yeah.. In conclusion: If I could have only one, no doubt, it would def be a barrel smoker, but living in the country with plenty of room and having 3 different ones works too 😉😇 Much love!! Greetings again; no doubt now it will be a Pit Boss Vertical 5. I am seeing issues with the augur jamming; seems the solution is don't leave pellets in the hopper. Or putting only enough pellets in the hopper to finish the smoking project. What is your experience?

Pitboss also had an option with the KC Combo platinum, it's a smoker and a separate grill with the griddle option. Having a smaller smoker chamber this is absolutely amazing as far as s smoker and having a griddle hooked to it makes it perfect for me. Check that one out

@@PatrickSipperly it is everything I could want, I was thinking about getting an Austin XL and a Blackstone, BUT wife saw this and now I have the best of everything. I can smoke, grill, and even griddle. I smoked shrimp in the smoker while I made fried rice on the griddle, I was smoking a pork shoulder and fixed bacon and eggs on the griddle. I also use the griddle to sear steaks, gives them at all over crispy sear. In a word it's amazing. Now it's not the biggest, but it is perfect for a family and friends.

I believe that is the correct name for that thermometer, but honestly, I don't use it. I use the digital thermometer on the smoker. I picked up a wireless digital thermometer that I still need to take out of the box! LOL.

This is what ive been looking for, even better that you used Pitboss products as well. Thank you for your review! Ive had a Pitboss 820 grill for 4 years and yes i agree it does smoke adequately but I have never been satisfied with the smoking flavors compared to other smoker setups. My biggest issue with it is that the airflow through the grill dries out meat surfaces too much, its been tough to smoke fish on it because of this and it tends to turn thinner meats into jerky. I just purchased the Copperhead 5 vertical smoker but my biggest concern was again because its a pellet smoker that there would be too much airflow in the unit whereas a traditional smoker the smoke would generally be static rising from the wood chips and burner. I have built the unit but have been waiting for a good answer or opinion on this before using it for the first time. What is your opinion on this, do you find there is any airflow in the vertical smoker or does the smoke circulate more naturally compared to the grill?

Hello travisk310! First, thanks for the kind words. Second, I can't say that I've had the same dried-out meat issues. For what it's worth, I usually do a half-smoke - half-wrapped cooking process. I smoke the meat on the grill or vertical smoker for say, 4-6 hours, then either wrap the meat with plastic then with foil and put it back onto the grill or into a crockpot for the remaining cook time. This ensures juicier meats and has worked well for me. I also make sure there's a container of water in the smoker to keep the meat moist as well. As far as airflow, I explain my theories about why I think verticals are better smokers in the above video. The verticals also have just one outlet for the smoke vs the horizontal smoker grills that have the chimney and the drip hole. I see a lot of smoke escape out that way too. Let me know if any of this helps to answer your questions.

Every couple of hours, but honestly, I forget most of the time. I smoked a brisket for 10 hours recently and probably only refilled the water twice. I brined it 9 hours, smoked it 10 hours, and finished it in a crock pot for 5 hours. It was amazing. The best one yet. Smokey and most.

My Sirius 4 from pit boss grills very well and it's the vertical I have not had a problem with grilling on mine just the only thing is if you grill in the vertical you got a grill on the very top shelf or else you will not grill I have came to find that out myself

Great video! This is the exact information I was looking for. I have a Traeger that is great for certain things, but I find that it lacks performance when smoking (I have a 575 model). I'm about to go ahead and buy myself a standup pit boss for some good long cooks. Thanks!

Has anyone had any issues with error codes ERH or ERL on the vertical smoker whilst following the instructions for priming, cleaning etc? I can't seem to go above 300F without getting either ERH or ERL which is temp too high or temp too low. Is there a fix that anyone has found or is something faulty?

If I remember correctly, the interior dimensions are 12.5" x 15" deep. I show that in this video: kzbin.info/www/bejne/hqqcZ6iPmNF-rKs at about 4:17. If your brisket or salmon fits those dimensions, then you're good!

How significant is the smoking quality difference between vertical and horizontal?

I think it's noticeable, but not off the charts. For example, today, I'm going to smoke a tomahawk steak then grill it. I'm going to do both in my Austin XL. I might also add a smoker tube to throw in more smoke. If I were just smoking, I'd use my Vertical, but since I'm smoking then grilling, it's the Austin Xl.

I literally came to the comment section to see you guys feedback. I'm about to buy my first smoker, and I wasn't sure if I should get the vertical or horizontal. I'm wondering just how much better of a smoked flavor does the vertical provide over the horizontal. Is it just a little better or lightyears better??

I would say verticals are offer noticeably better smoke flavor. When I want to smoke something, I get out my vertical every time.

My Copperhead came with 4 racks that are about 12x15 each. The Austin XL has about 1000 sq inches. I cut ribs to fit as needed. I also finish a lot of my meat in a crock pot (vs wrapping them and putting them back out on the grill so they won't dry out). Up to you as to how you utilize that space. I think space is a major consideration. Also how much you smoke. If you do a lot of food for large groups or gatherings bigger is better. You said it best on the vertical just right for you and your wife. I have the Pit Boss Copperhead/series 5. Just too big for me as a single person. I’m going to replace it with a series 3 like yours. Likewise, the Austin XL also would be too big for me. Pit Boss makes a grill available at Walmart called the Classic. Similar to the XL, just smaller. Just about the right size for limited space and smaller families. I like my Pit Boss it’s a really great smoker and makes great food.

We have the PitBoss vertical smoker like this and love it. I was surprised to see the grill one had that great option to grill on the open flame. I know that the higher the temperature the more pellets you will use. Do you find yourself having to buy way more pellets for the PitBoss grill?

Hello Julia! Great question and to my surprise, no. The Austin XL is an efficient grill and doesn't burn through pellets as quickly as I feared when I bought it. It's a great grill though much heavier and bulky compared to the vertical smoker.

Hi Dee Dee! Thanks for the thumbs up! Fortunately, the brisket is easy to cook. I think the brisket was about 6 lbs...ish... You can see the brine process here in this video: kzbin.info/www/bejne/p6rCoWuLbbCmeJY I grabbed a container and mixed 1 cup salt + 1 cup sugar into some water, then added some a tbs of liquid smoke. Mixed it thoroughly. I stabbed the brisket with a knife several times to create openings for the brine to penetrate easily. Then I submerged the brisket into the brine adding enough water to cover the meat. Then I topped it with ice to keep it cold enough for 9 hours outside of any refrigeration. The 9 hours isn't a magic number, it was just the time I had before I wanted to start smoking. You can brine for a couple of days if you want, but I wouldn't bother if it's less than 4 hours. Then into the vertical smoker for 10 hours (overnight in my case) @ 225. Then I took it out and put it directly into a large crock pot for 5 hours on low. I do that because after about 5 hours in the smoker it's just cooking anyway. Probably not much more smoke getting into the meat. Cooking it in a sealed crock pot keeps it moist the rest of the way. Some people wrap their meat. I prefer to use a crock pot. Then I shut off the crock pot and just let it rest as much as an hour. This was our travel time out to my folks' place. The meat was so moist and tender it started coming apart getting it out of the crock. The best brisket ever. Let me know if this helps.

Has anyone tried using the MojoBricks for their Grill/Smoker to improve the Smoke? I am in the Middle of trying to decide which Pellet Grill/Smoker to Purchase and i hear the same regarding lack of smoke flavor - and i have read that these MojoBricks improve that?- I have a Wood Vertical Smoker but takes a lot out of me running back and forth maintaining the Temp

Thanks for such an informative video! Being that sausage/meat sticks, brisket, and other lengthy smoke meats, vertical seems to be the wise choice for me. How do you feel about the finished product (compared to grilled meats, or those cooked in an electric smoker)? I've been fixated on the idea of a pellet smoker for years, but I'm also not familiar with the taste of the finished product.

I bought the Austin xl about a year ago, I would have got the vertical had I known they made one. Only complaint I have with the xl is the lack of smoke flavor.

I understand, Chris. I didn't know they had a vertical either, but then again, I was looking for a pellet smoker grill. Your pellets will play a part in the smokiness but without a doubt, the vertical design offers more smoke regardless of pellets in my opinion. Thanks for watching and for the comment!

Just take the drip pan out of the pellet smoker and line the bottom of the grill with foil. Then you will get a better smoke flavor.
