Penne alla vodka

Ingredients:
28 ounce can of crushed tomatoes
1 yellow onion (diced)
2 cloves garlic, finely minced
¼ teaspoon crushed red pepper, or more to taste
1 teaspoon kosher salt
3 tablespoons tomato paste
⅔ cup vodka
1 pound rigatoni or penne pasta
1 cup heavy cream
¼ teaspoon ground pepper
1/3 cup of grated Parmesan cheese
2 tablespoons parsley flakes
3 tablespoons basil

...the real "penne alla vodka" doesn't need oregano, but has one more ingredient: pancetta (cured unsmoked bacon), finely chopped in little cubes and sauteed together with the onion. Anyway, this is one of my favorite dishes... 👍

I was originally going to put pancetta in there but my mother-in-law is a vegetarian so I didn’t put it there. I didn’t think she was gonna have any because she doesn’t care for penne alla vodka, but she said she was gonna have some so I decided to leave out the pancetta
