You all should look up the dark inspiration of the Mad Hatter. Basically, back when the story was written the workers that made hats was exposed to mercury during the felt making process. And this caused an illness called mad hatter's disease. The inclusion of the character was meant to raise awareness of the issue.

Fun fact for everybody, Ed Wynn (The Voice of the Mad Hatter) actually improvised the scene where the mad Hatter was fixing the white rabbits watch. It wasn’t part of the script, but during a break, he improvises the scene while the cameras happen to be rolling, and Walt Disney loved it so much he made the animators include this in the movie

The mad hatter is on mercury poisoning from making hats in the 19th century. Mercury was used on top hat brims. An apprentice would be a bit odd. The journeyman would be considered eccentric and the master hatters were mad due to how much mercury exposure he had had over his experience making hats.

I was in a production of Alice in Wonderland when I was in college. I played the Dormouse. I had a couple of people ask me if I was British, and I even had a woman in the audience, who was from the UK say that I almost had her fooled. Almost, because at some point I shifted from a Cornish accent to a Welsh one. My natural accent is Northern Alabamian.

He is from a time when many things were still toxic and people were blissfully unaware. Hatters were known to be "odd," people back then because no one knew that the fumes were slowly killing their brains, essentially. You can find this information all over the internet if you read about Hatters from back then. . . Or you can listen to Johnny Depp talk about his characters inspiration when he did interviews for the movie. He goes into DEPPth about the history of Hatters!
