One thing I've noticed about chef Vivien over other chefs, is his equipment handling skills, he looks as though he's used his skills every day and is a proper craftsmen, not just a part time tv chef. He looks so confident and comfortable. It's my ambition at the moment to cook also as good as this.

True. Learning to make sauces has changed my life, just like Chef V said. Today cooking is an adventure, not a chore. Making my own stocks and sauces, getting the most out of the meats and veggies that I buy, costs less and tastes so much better than buying processed factory-made food.

Brown veal stock, beef stock in my case beef Knor cube :)
