Yes. In some cases, they will give rating of single phase transformer. Based on the winding connection we need to calculate for 3 phase. Also winding connection is mandatory for zero sequence network representation which will come in later stages of this subject

Delta side, phase and line voltage is same. So, vb will become phase quantity by default. So, you will use Sb also wrt phase instead of 3Phase

Are you using current in that equation? According to your equation you have only Vb and Sb as given values. In that context I told. If you are using V and current to find Zb then accordingly equations will change
