I cooked 2 mins per side. I reduced the time to 25-30 seconds on the edges, and increased time in oven by 2 minutes (total 4 mins). It help reduce the smoke in the kitchen/house, and the steak, still came out perfect... maybe the best steak I have ever cooked in my life. Thank you!

I followed this recipe to a ‘T’ . I cooked two fillets at the same time in one cast iron skillet. I used salt, coarse ground pepper, and Kent Rollins Mesquite seasoning. The fillets came out perfect !! You couldn’t find them any better in a restaurant !! Thank You Kent !! We had a great dinner !!

The steps between the steps. I didn't know about heating the cast iron pan FIRST then placing the oil in the pan. Little things like that do make a big difference.

Perfect! Keep it simple. This is so much easier than building a fire on the grill, especially for a single Filet. I most appreciate the instruction about TIME at each step. As you said, "over cook a filet and you're wasting your money." Thanks from a subscriber.

I've cooked quite a few filets and ribeyes on 1/4" mild steel plate on bbq. Like you said.... get the metal VERY HOT!!! The iron sears the meat really well and I cook onions along side. Thanks for GREAT videos!!!!!!!!!!!!!!

Have tried this recipe three times: twice with stove/oven and now once with side burner/grill and it has produced amazing steak each time. When using the grill I threw in some fresh oregano and tarragon at the end and just allowed it to crisp in the butter and steak fat. Perfect. Also keeps the grill clean and helps further season the cast iron pan. It's a winner, Kent!

Just did this with a New York Strip, worked great: 450°, 2 min on both sides, then another 2min on the first side inside the oven....5min rest - then down the hatch. Been on a 'Cast Iron Kick' since watching one of your videos last week and going down a rabbit hole. I dusted off a Cast Iron skillet I purchased when I first bought my house 12yrs ago(I cooked with it once and gave up). Started with the cleaning and care videos to get it back in shape and seasoned - and have been trying things from your channel just about every day since. Thanks!
