Perfect athirasa kajjaya with tips& tricks 💯 | Kajjaya recipe | Athirasa recipe | ಕಜ್ಜಾಯ | Adhirasam
Athirasa is a traditional sweet or snack recipe, which is usually prepared during festivals and Poojas as an oblation of god. Preparation of Athirasa is little tricky for 1-2 times. But once the correct tips, conditions followed and all the measurements & steps are proper, it is not a difficult task.
Athirasa is prepared by using mainly rice & jaggery. Additionally, grated copra, pepper cardamom, sesame seeds are added to enhance the taste. The rice powder should be homemade, shop bought rice powder is not at all suitable. The reason is, there must be a little moisture in the rice powder. That is the first condition in making Athirasa/ kajjaya. The next is, one must be very thorough regarding Jaggery syrup consistency. If consistency missed, Athirasa may fail. Athirasa batter/dough must be kept aside for minimum 8 hours before frying it. But maximumly it can be kept for 3-4 days. If you like crispy Athirasa, you can store it in an airtight container and if you want soft Athirasa, you have to store it openly, just by covering a plate or something. It tastes good in both way. Athirasa can be stored for around 15 days.

3/4 cup Jaggary
Dry coconut 1/2 cup

ಈ ಆಹಾರ ಪದಾರ್ಥಗಳು ಇಷ್ಟು ಸಂಕೀರ್ಣವಾದ ತಂತ್ರವನ್ನು ಹೊಂದಿವೆ ಎಂದು ನನಗೆ ತಿಳಿದಿರಲಿಲ್ಲ. ಅದನ್ನು ತಿಳಿದು ಸಂತೋಷವಾಯಿತು. ಇದು ಒಳ್ಳೆಯ ವಿಡಿಯೋ ಆಗಿತ್ತು. ಧನ್ಯವಾದ. ನವರಾತ್ರಿಯ ಶುಭಾಶಯಗಳು.

We do make but we do not add pepper. And lot of tips I learnt 1. Achu Bella 2. Soaking overnight 3. Keeping the batter for 12 hours 4. Small lots 5. Mud vessel,open storage 6. In fact it is an art 🙏

It's called athirasam among the Tamils, kajjaaya among the Kannadigas and Anarasa among the Marathis. It is a pan south Indian sweet. In my childhood at our village , we didn't know cakes and other cookies..Athirasam is so popular, no festival is celebrated without Athirasam Kajjaaya. Thanks for your narration with tips on making paaku . Your DK accent is feast to ears.

ಬೆಲ್ಲ ದ ಪಾಕ ಬಂದ ನಂತರ ಅದಕ್ಕೆ ಸ್ವಲ್ಪ ತುಪ್ಪ ಸೇರಿಸಿದರೆ ಪಾಕ ಮತ್ತೆ ಏರುವುದಿಲ್ಲ. ನಂತರ ಬಾಣಲೆ ಯನ್ನು ಸ್ಟ್ವವ್ ನಿಂದ ಕೆಳಕ್ಕಿಳಿಸಿ ಅಕ್ಕಿ ಹಿಟ್ಟನ್ನು ಸ್ವಲ್ಪ ಸ್ವಲ್ಪ ಸೇರಿಸುತ್ತಾ ಬಂದರೆ ಅತಿರಸ ತುಂಬಾ ಚೆನ್ನಾಗಿ ಬರುತ್ತದೆ. ತುಪ್ಪ ಜಾಸ್ತಿ ಹಾಕಿದರೂ ತೊಂದರೆ ಇಲ್ಲ, ಆಮೇಲೆ ಮೇಲಕ್ಕೆ ಬರುತ್ತದೆ ಹಾಗೂ ಹುರಿಯುವಾಗ ಜಾಸ್ತಿ ಎಣ್ಣೆ ಹೀರಿಕೊಳ್ಳದೆ,ತುಂಬಾ ಮ್ರೃದುವಾಗಿ ಬರುತ್ತದೆ

Athirasa/kajjaya is an emotion. My mom is really good in making this. Neighbors come and call my mom to make the Paaka :) We follow the same steps like soaking, grinding, making paaka and keeping for 8hrs and make the fresh kajjaya for pooja. Thanks for this Video .. felt so happy watching this..
