3lbs of onions gets you 3/4 cup… I just made some yesterday and that was my result. But it took me 4 hours not 45 minutes. I used 4 tablespoons of butter, 1 tablespoon of salt and sweet onions.

When caramelizing onions never add salt straightaway, add when they've are starting to colour. If the pan is getting to hot, add a drop of cold water this will kill the heat, plus the water will evaporate.

@@JC-kl7qvAlmost nothing in cooking is that precise. Delaying when you put salt in might have some benefits but if you salt them right away it isn’t going to ruin anything.

@JC-kl7qv salt stops the onions from caramlising add the salt as soon as you see them starting to colour salt draws out the water to quickly meaning your boiling onions not frying them

@@Sanderly1820 I make carmelized onions and add salt right away and it works just fine. And I’ve had caramelized onions where the cook didn’t add salt right away and that also worked just fine. Cooking isn’t an exact science, there are lots of ways to achieve the same results.

Steaming the onions first by cooking them in a pan with a bit of water speeds up the browning process, and a pinch of baking soda near the end cuts off a ton of time.

Yup! You can make a huge batch and freeze portions, they keep for a few months in the freezer. The caramelizing process also dehydrates the onion, so they also keep well in the refrigerator :)
