I liked how you resolved the strawberry sauce problem. Would balsamic vinegar work instead of lemon or would that screw up the flavour profile.

Yeah it would probably work but it would definitely change the flavour. Saying that, balsamic & strawberry is a known flavour combo. Give it a try and let me know 👍

What stabilizer did you use? So far, I have not been able to find specialized ingredients ice cream stabilizer in the US. Thanks!

You can order Special Ingredients from their website and they will ship to the US. 250g would make 250kg of ice cream! OR you can just use something like Xanthan gum, it’s a decent one to start with tbh.

Hey, very nice video, enjoyed the most parts really much. i really dont know why you dont have so much subs or views.. maybe just a lil review from me as a viewer: maybe keep the videos a little shorter like around 15 mins. you load up videos constantly so the 15 mins will be fine i guess? so you can focus a little bit more on the "punch"parts and make it even more enjoyable and interesting. maybe a little bit cutting, not much so you can read maybe offscreen the skript of the recipe or something like that. And then: Smiiiile, show the people the joy on what you do so they can feel the joy too :) it dosnt change the input you give, i know. but it makes just so much difference for the viewer. I dont make videos or anything so i dont have any experience. but that are the points i see as a viewer. I believe you deserve many more views and thumbs up beacuse u make very quality content. Keep going. and sry for my broken english ':)

since the biscuit butter strawberry is added separately to the churn mixture, would you exclude those ingredients in calculation for determining pod and pac?

Add ins do not effect the freezing point hence why they are not included in calculations. Perceived sweetness is again difficult to state accurately as some people will use less add in compared to other. That’s why it’s only the Ice Cream itself that relate to these numbers. Now if we are talking kcal and macros, we should most definitely be including these numbers.

What is your thought if I add half tsp of cornflour while making strawberry sauce to thicken the sauce? Or should I stck with Xanthum ?

Go for it! Cornflour will make the sauce opaque but apart from that, how you thicken it is up to you 👍

Yeah should be able to. The swirl would be best done after the spin and by hand though.

Hello Nick! Question why do we need to refrigerate the icecream base for 24 hours? I usually pre cool my ice cream bases in an ice water bath with the base in a steel pot would that work here?

Yes that would be fine. Sometimes the extended chill time is to boost subtle flavors. I will make that clearer in future videos 👍

It generally has 0.1% fat content.

@@diogopinheiro05 it’s all about Milk Solids that are not fat. That is basically milk proteins that stabilize water, increase overrun and increase the creamy mouthfeel.

Thanks for this! Definitely gonna make it sometime this week, looks very, very nice. Shame you had to do the entire video again, you look clearly annoyed by the whole thing, hope tasting the ice cream in the end resolved some of that mate. For some reason in the info section theres no recipe for the actual ice cream showing up,

Yeah, I think it was a problem on my end, restarted phone and it seems to be there now. is it the Special Ingredients Xanthan Gum you recommend for stabilizer, I've been using eggs as I've only just found your channel and got into this in the last month and already made like 10 tubs of ice cream, bit obsessed with it now lol
