This recipe is awesome, these eggs are so freaking delicious. I LOVE Ajitama whenever I order ramen, and am beyond thrilled that I can make them myself so easily. The ice bath trick to get them to peel well is brilliant, and worked so well, even on a fresh box of eggs. And the 7 minutes (6:30 when you put the last egg in) is the perfect amount of time for them to be beautifully soft and silky with just a little bit of runny yolk. 10/10

For food safety reasons, I do not recommend reusing this marinade with new boiled eggs. You can repurpose this marinade as a seasoning sauce for your stir-fried or simmered dishes but use it soon.

If anyone finds it difficult to peel the shell off the egg you can add a pinch of salt into the water together with the egg. This method works all the time for me.

When I boil eggs they crack pretty often. I know some people suggest putting the eggs in room temperature water and heating it gradually over the stove. What can I do about this?

Two things: One, adding to cool water will make them harder to peel. Two, gently pricking the fat end of the egg with a pin before cooking should help reduce cracking during boiling.

I mentioned in the blog post. For food safety reasons, it’s usually recommended not to reuse it for new boiled eggs. You can use the marinade for cooking (add heat so it’s safer). I also explained that I use minimal amount t of condiments (not to waste) but plastic bag is necessary to cover the eggs. If you use a container you will need more condiments…

I usually put the leftover in ice cube trays and use it cube by cube reheated for sauces and soups (for example as a noodle soup base)

I hear this a few times ago but I haven't experienced it myself. Do you lower one egg at a time gently all the way to the bottom of the pot? This method is actually quite common and it won't be a common method if the majority of people end up cracking eggs. I'm always curious how eggs can be cracked... do you have enough water in it, was the boiling water jumping around (if so lower it a bit?)... what kind of ladle or tool do you use? Don't use a regular spoon, because you can't lower the egg nicely to the bottom (because you tilt the spoon and that will give a shock to the egg). I believe that you can improve something to make it work. I do this all the time and my eggs never cracked... I don't think it's a type of eggs....
