Gennaro Contaldo is a genius, there’s no other appropriate way to say it. He understands flavor, texture and virtually every aspect of food deeply and his passion for cooking is delightful, fun and infectious. I’ve never been able to cook, but thanks to Gennaro I have made so many dishes now that aren’t just good or very good, they are astonishingly GREAT. And I’ve eaten at many very expensive world class restaurants in the United States and Europe in my life. I am deeply moved by his ability to communicate why he does what he does. Often very gifted people can do it but they can’t teach it. Gennaro not only can teach it but he has provided great joy and pleasure to me and my family. Thank you to this great man for making these videos, they are a great gift to the world. God bless you Gennaro!!!!

Classical tuna pasta! Very tasty. Is it possible to put in description just a list of ingredients?

- 1 large shallot (or 2 small shallots), medium dice (or however you want) - Chili, to taste - 1 Tbsp capers - 2 anchovy fillets - a splash of water (I’m sure you’d like an amount here, so just try maybe 1/4 cup and see how that is; you don’t want it soupy. Just a little to let the onions soften for the 5 minute duration. The water should be basically gone by the end of that time, I think) - Let’s say about 1/2 lb pasta; usually you do 1/4 lb per person - I’m gonna call that maybe about 1/4 cup chopped parsley - 2 tins of tuna packed in olive oil (I think Rio should be an okay brand to use, if you can find it; or just any tuna packed in olive oil) - Lemon juice, to taste I hope that’s everything, and I hope that’s a helpful place to start! It’s really all about your personal taste, so scare ingredients up or down as you see fit. Oh, and for the pasta water… it’s really going to depend every time on various things I don’t yet understand, but I’d say he put in MAYBE 1/4 cup. It really does depend on what you see happening in front of you, though. Most important, just have fun, experiment a little, and gain the confidence to cook it how you like to eat it! Pasta is all about heart, gaining experience, and your own personal tastes. Have fun!

Mackerel is good to look up to alternate with tuna...better at sustainablility, no fishing quotas. Eat with mussels to get selenium...helps detox. Both types of fish are good to eat twice a week. Love canned in olive oil mackerel as a sandwich , (salad) with red pepper.
