I remember watching you prep a steak on local cable tv and even the importance of how to cut it post plating. Now i come to watch you teach me how to not ruin a 50$ steak, when i usually get the typical 7.99 per LB 10$ for a 20 oz deal. I wind up thinking the cut isnt expensive enough for me to waste time on baking/searing or reverse searing. Though the prep time/marinade needed and investment to seasoning/herb rubs/liquid smoking for said 10$ steak becomes integral in making it taste like "MORE".

Hi Sam, in South Africa the distinction between porterhouse and T-bones is merely based on the presence of the fillet. With fillet = T-bone, no fillet = porterhouse

I have used the reverse sear method and it is awesome. I take mine out of the oven when it reaches 125, let it rest and then sear 1 minute each side and it is perfect

I do the same method. But with my pellet grill rather than the oven... Adds that smoke flavor and makes it all just a bit more deliciouser... Then top with a little garlic and rosemary compound butter.. Yummy!

It is a T-bone. Just a wider T-bone so they call it a Porterhouse to charge more. Not a bad thing, just commercialization.

Bertrice : yes, as the short loin reaches toward the front of the steer, the filet side get narrower. When the filet side is 1/2 inch or less it’s called a t-bone. Also, since filet is more expensive than strip, the bigger filet on the porterhouse commands more money. And, as an aside, Peter Lugars in Brooklyn makes the best porterhouse you will ever eat.

Hi Sam, great episode! I have already been seasoning exactly the same way, but never knew about the reverse method. Mostly I would pan fry at medium heat for 6 minutes each side.. happy to have learned this thank you! keep it up with the great episodes! I used to be just a NY Strip guy but got a porterhouse the other day and was amazed by how tender. The oven method solves my problem too of such a big steak not cooking thoroughly. thanks!

I love and hate this video. I had to watch it to learn how to make a nice 1.77 lb., butcher cut, Porterhouse steak for my self tomorrow evening. So depressed right now! My stomach is doing summer salts. Been on a liquid diet of broth for 3 days now; preparing for a colonscopy tomorrow morning, Can't wait to cook that steak tomorrow night using your method. when i do mushrooms in a frypan, i use as little oil as possible. even none. i fry (or whatever) on really low heat and sprinkle a little bit of salt so the mushrooms sweat and sautee in their own liquids. the flavour and texture are great! low and slow ...

I love a porterhouse steak. Las time in Vegas at Delmonico's in Venetian has a porterhouse for 2. Was about $120 for just the steak . Too be honest I now prefer a good ribeye.

I don’t know if this is common… but check out the T Bones before you get a porterhouse. Especially when they’re in 2 or 3 packs precut. I’ve found porterhouse sized filet cuts in value packs with normal sized t bones. Ends up being an incredible value. Porterhouses just cook better, I find. Helps the strip cook more even.

Sam, I learned a good way to salt a steak, I always here you talking about the flavors so please try this, salt your steak the night before, the salt permeates the steak so the salt flavor is not just on the outside, and give the steak a new depth of flavor, it also does some tenderizing. I salt the steak normally the night before, put it on a rack and into the fridge it goes, uncovered or with a damp paper towel over it, or wrap it back up in the butchers paper, you choose. You will not be sorry! By the way, I love your show, I love the way you talk to your family, it is real not a sterile environment, what could be better than a man with his family doing a show! Thank you very much!

Am I the only one that prefers the NY Strip over the Filet? I find it to have better marbling (usually) and if cooked right, just as tender as its counterpart, the filet mignon. I know the filet is considered the "superior" cut on average but, the strip is just as beautiful. Edit: This steak was cooked properly btw, great vid brother. Definitely SUPER late to this video.
