Thank you soooooo much! The over hard egg seems perfect for me! Just a tiny bit of creaminess inside. I never liked eggs as a kid but for some reason I'm eating more and more eggs in my 20s. Still not a big fan of the runny yolk, tho hahahaha. Will have to work my way through that one.

boil the whole eggs the day before for 3 minutes, put them in ice water and then in the freezer ... peel them now they are ready in room temperature to have 1-2 minutes when they need to be used ... or you can store it at 45 celcius in hours they are ready when you need them

In the UK we keep our eggs out of the fridge. No reason to refrigerate. Cold eggs will also take longer to poach and the white will separate in the pan.

I'm thinking the pan method looks better. It looks like you can cook more than 1 egg at a time. If I used the pot it looks like I can only cook one egg at a time and since I like them hard, the first eggs would be cold before I finish cooking all the eggs.

Nothing new here. Many top chefs think using vinegar and creating a whirlpool is an old wives tail. Personally fresh eggs are the key.
