I wish you'd mentioned if you used percentages with the flour being 100% and all other parts a percentage of the flour.

No mate 🙂 we don't have to, as recipes are always the same apart from sourdough, just remember what's the point of % of flour when you are not going to be using the same flour as me, I see this all the time 😀 what a waste of time, a very easy way to make bread 1 qt of water, 1 oz salt 🧂 and 4lb of real bread flour, yeast is a very different method, fast or slow this can vary from 1 - 2 oz 😀 if you want % work it out, laters Steve 🤣
