i love this system but what is the trick to setting all the columns at the same height?

Probably they didn't, however if it were me just make sure the trusses are installed level on load bearing lumber

You pour a floating slab and tie it to the (non-floating) concrete gradebeam with rebar. Not smart.

Exactly. Floating slabs are meant to be.. just that.. floating slabs! Never would have tied it to the grade beam.
