Hola chef Gregor, I maid the pernil according to your specifications including the video on arroz con gandules. The low sodium chicken stock was a game changer. My family was so impressed with the presentation the tasting of the food they were just constantly showering me with accolades! My Italian husband adored even the crackling. It was an amazing feat. Thank you so much for your points on the dehydration of the pork skin. Everybody loved the meal, and they have not stopped talking about in the past two days, so thank you from the bottom of my heart for being phenomenal and allow me to cook a restaurant no a better than a restaurant style Latin meal.

Hermano, hidratación y deshidratación suena casi igual pero son totalmente diferentes. La hidratación es cuando humedeces algo con algún líquido. Deshidratación es cuando por ejemplo utilizas la sal para retirar la humedad de la pier del pernil. No me lo sé pero te dejo la diferencia para aprender. Muy buen vídeo y se ve rico 🤯
