O.K. I have been watching a TON of pernil recipes and trying to get as thorough a knowledge of how to make it well, as I can. I watched 99% of them go on to roast the pernil uncovered, which made me wonder how much of the pernil was benefitting from the wonderful juices created. I haven't made yours yet but you are absolutely right. Grandma changed the game by boiling it first and then covering it. It's not enough for the juices to just run through the meat, it needs to cook in it and that's what your recipe allows for it to do. Girl, I am missing your Grandmother for you. May she rest in peace and love. Thank you. I will let you know how it comes out! You are doing a beautiful job.

Thank you so much. You are too too sweet and you brightened up my Monday morning! There are so many ways of making pernil. My aunt makes it uncovered and hers doesn't dry out... but I'm not so lucky so I do it the way my grandmother taught me lol. It makes TON of juice but I rather have extra juice that dry pernil lol. Sometimes, I'll even strain the left over pernil juice and use it as an aus-jus dipping sauce for Cuban Sandwiches the next day. Haha. So good. Let me know how it comes out!

The boiling stage makes me think that pernil could be done as a long-cook sous vide process (say, 20 hrs), followed by the last hour roasting at higher temp and final broil.

Tried the recipe yesterday, almost to the last detail (except reducing salt a bit and no broiling at the end, unnecessary). This is the very first pernil recipe that was a success for us. I can say it's an unexpected success, didn't have big hopes for a modest pork shoulder picnic. I was wrong, this is spectacular food. Everything worked - the temperatures, timing, ingredients, the whole recipe. Thank you!

Every one has a slightly different ways of doing it. I've seen the washing with vinegar method before (some use it, others don't). But the most common thing used across all recipes and countries, is that they add some water to the tray before covering it with aluminum foil (or water/marinade mix). This is so that the liquid begins to steam and penetrate the pernil, which helps keep it moist and tender. By you putting the pernil in a pot and boiling it, before going into the oven - the same thing would already be happening inside the covered tray as it cooks in the over. The liquid is steaming/boiling, and staying inside the tray because it is cover by the aluminum foil. There really is no need to boil it before hand (except that abuela said so). But that's good seasoning ingredients though. I'm going to try it once with those seasoning ingredients (you basically made a "mojito" marinade). Yummy.

I honestly cook a ton of recipes i find online, but i never really comment or review them. I just made this and i was blown away at how tender and moist the meat turned out. Absolutely one of the best Pernil recipes out there. I made a taco with cilantro, onions, hot sauce, and a squeeze of lime. I giggled like a school girl after eating it because it was so good.

I'm cooking a pernil using this technique. I marinated for about 16 hours. I just finished boiling it and it is now 30 mins in the oven, roasting. It won't finish until after 1am. But so what, we're on quarantine lol. I'll leave a comment after it's done cooking and we eat. Smelling real good in here right now that's for sure.

Wow! This is the BEST way to cook peril. The boiling did make a Super juicy peril, which I didn't think it would. So delicious!!! Instead orange juice, I used Mojo Criollo instead. 3 people ate for 3 days from a 9 pound peril which only costs $10. Cha ching. This is my new base for peril. Thank you thank you!!!😍😍😘💋💋💋🤝

I made this pernil and it was so tasty. I baked uncovered at 475 degrees for 30 minutes to seer the meat, then l covered it and added 1 cup of water to the pan, pouring the seasoning on the meat. Baked at 350 for 2:30 minutes and took it out, it was 185 degrees, perfectly cooked. Next time l will make it with the boil procedure to see the difference. Thank you Chef Zee ❤❤❤

So I frequent a Spanish restaurant in my city specifically for the pernil.. for years I have wanted to make it myself to save $$ I’m here to say this recipe is ABSOLUTELY DELICIOUS! This pernil is better than what I was buying, the recipe was very easy to follow and although it take some time preparing it, it IS WELL WORTH the effort. On a different note, I’ve wasted probably close to 50lbs of rice trying to make rice and beans over the past two years, since this recipe was spot on, I’m gonna give your rice recipe a shot. I guarantee your skin is not that crispy. I would pat the skin dry and put some salt on it on the third hour.

I love pernil, never made it but lobe to cook. Used your recipe for my first pernil. It was HANDS DOWN ONE OF THE BEST PERNILS I ATE. I swear I danced with joy/ humming with them first few BITES LOL. OMG THANK YOU

Ok so I made this for the first time today BAM! it was fall off the bone. I added a few other seasons more to my taste buds and I had to guess at the temp 350 for the first hour then down to 300 for 2.5 hours. Then 375 uncovered for 45 mins basting the entire time. Came out great! could not have even started with out you. I did boil like you said in the beginning.

Her video is spot on. I make it the same except i cook mine for about 5 to 6 hrs on very low flame, 280 in the oven. After the first 4 hrs i jack it up to 315 then 2 hrs later i uncover all and put it in 400. I also remove the skin from my pernil and start cooking it when the oven is up to 315. Super crunchy skin and very moist meat. Great vid🥃🇵🇷

I'm a white Caucasian who looked forward to Christmas and Thanksgiving each year back when I was dating a Dominican woman because her mother made delicious pernil and moro con gandules. I followed these recipes and I couldn't have been happier. Thank you for what you do.

Making one today for New Year’s Eve but I like to remove the skin just enough to pull it back so I can season the whole thing. Plus it easier to remove the skin when it’s done.

Let me just say WOW!!!!! This is the juiciest most flavorful pernil I have eveeeerrrr tasted in my life, and I have tasted and cooked many, my children father is Puerto Rican and has a huuuge family, so I have been to many family party’s 💃 and there is ALWAYS a pernil 😊 The best part in my opinion!!! So I have mastered this recipe let me tell you this white girl can now cook a mean Pernil thanks to you💃💃💃💃 Thank you for this recipe
