How do they manage their UTXOs? Many small transactions will eventually make all the BTC in their wallets unspendable. If the fees are larger than the UTXO value the UTXO is worthless.

They are transacting through lightning wallets - some custodial, some non-custodial. Shared lightning channels and likely fedimints within the circular economies soon, so minimal UTXOs

It's explained in the doc! The funding is by donation through a non-profit (motiv.ngo), and is also sustained by MOTIV participants paying for their classes and continued programs with Bitcoin. The internet is provided/subsidized by the government in a lot of these areas.

I enjoyed this video, but it completely lacks explaining WHY the bitcoin is helpful to them at all. People are selling water for bitcoin, and? How does bitcoin enable them to do this but their local currency doesn't? You didn't even explain why they're using it and not cash, or how it's benefiting them

It is explained but it is in the Spanish interviews. Some of these towns are 3+ hours outside major towns and nowhere near banks, and you would need a 4x4 or a boat to get in and out (plus they don't have IDs so no bank or other app would allow them to use normal currency). But they have internet so they can use Bitcoin wallets.
