I have not done that kind of study. However, i know that the difficulty will lie in defining the interface between the anchor and fill material. For these kind of problems i would suggest you to use better software such as PLAXIS or FLAC.

The PFC software manual and the examples given are the best way to go. Later on, you can try to reproduce the results of researchers and progress. You can simulate rock cutting by importing the geometry of the cutter and define a rock model (Discrete Fracture Network) with appropriate parameters and provide a basic code for the movement of the cutter.

For creating a geometry file, you can use any solid work software such as autocad, rhino, etc. The file shall be in .stl format and you should save them in the same direcory of pfc project.

The basics are provided with the software as a form of manual. It is a cumbersome process in beginning, but you will start to like it in timeframe of 1-2 weeks.

Currently I am pursuing some other tasks so I will not be able to do it now. However, it is a good suggestion. I can tell you that there is an example simulation in PFC documentation, where they perform a stable simulation on the creating a tunnel face or mining in rock wall.
