I would say the vast majority of all the caribbean islands have some version of Green Seasoning that cater to their island style and whatever herb is uniquely local to that island. To have the seasoning last even longer you can spoon it into some egg trays and put them in the freezer to freeze. When frozen pop out the frozen seasoning cubes and put them all in a plastic bag. You get a a bag full of cubes green seasoning that way.

Yardie I love your show. I found you because I was trying to remember how to make green, smashed plantains. I'm loving your recipes. I freeze my leftover vegetables too, makes for quick soups or stir fry later. Did you know you can take a whole tomato, slice off the top, and freeze it? I add them to my curry and stew it in. I just ran out of my frozen summer ripe tomatoes yesterday. Can't wait for summer again

Ok "shadow benny" (not sure of the spelling) or Culantro is a herb that's almost like cilantro. It has a lime flavor and is very good in curries. It's in the Latin supermarket mainly in the USA and Tomatillos is a green fruit looking like a tomato with a leave like covering. It is used like a sweet or bell pepper. It's not too flavorful but adds body and that little tangy vibe to any meat dish. Great for roasting and stews. The insides want to remind you of eggplant. It may very well be of the eggplant family.

I like your take on green seasoning and I like that you didn’t just call it Jamaican green seasoning since this version isn’t common amongst the average Jamaican home. Shadon Beni is considered a weed in Jamaica (spirit weed is shadon Beni/culantro). My granny would fling them out of her garden if she saw them lol. I think in Jamaica our version eventually became Jerk seasoning with allspice/pimento being the base instead of shadon beni. None the less your version looks flavorful and I am going to try it.

You did a good job, if you have pimento peppers ( flavor pepper) it has a great flavor, smell and taste without the heat. You can add a few. I don't know if you have it in florida.
