Quesadillas is my specialty and you make them just like me. I do all kinds...Egg, sausage and cheddar..Steak ,peppers,onions and cheese. Sometimes pizza sauce with peppers, onions and mozzarella cheese add some pepperoni...Delicious ! But an enroll quesadilla ? I gotta check that out ! As always God Bless !

Gina, girl, girl, GIRL, I made this recipe tonight for my husband and he absolutely loved them. I followed your recipe to the T and I included mushrooms. It was so good that I found myself sitting at my kitchen table doing the little dance you do. I have made your ox tails, short ribs and fried gizzards with the ranch, hot sauce and honey dip. Gina, Put a small layer of cream cheese on the outside of each tortilla and the open ends will seal from the heat of the other cheeses. Fillings will not fall out. I’m just saying...:

When my Dad sisters would come out too visit they would bring thin steak & fresh rolls straight from Philly boy was that a treat not just for us but especially my Dad because he grew up with them. Going to try this using quesadilla cheese and canned mushrooms, and making it into an egg omelete instead of using flour tortillas. Topped with sour cream that have chives in it. Love how you encourage watchers to tweak the recipes to their taste.
