That looks insanely good. I never go out anymore. Most restaurants nowadays are just about the atmosphere and ambiance than they are about the food. They fill you with $12 drinks and cheap chips and salsa or bread sticks. I can add mood lights to my own kitchen and dining area. I have a air fryer, a Instantpot, and I have a stove top. What you are doing alone with so many other great cooking channels is making everyone's dining experience more delightful and personal. A date night with wife or husband would be better spent at home watching videos like yours. The world is a much better place with channels like yours!!!

I like my quesadillas fairly simple like the first ones I had many decades ago. The first times I had a quesadilla it was just cheese and slices of ortega chilis and some pico de gallo on the side. I like your method of putting the cheese on the grill then the tortilla then flip, have to try that. Thanks for all you videos.

I like the way you did the cheese directly on pan and carmalized it. I saw a chef do that to a hamburger but the cheese went under the meat for a few minuts

I make myself a breakfast quesadilla nearly every morning. I cheat a lot! LOL, I scramble 2 eggs in a bowl and add several spoons of Hatch extra hot green chilies, sprinkle some Hormel bacon bits and cheese over it all. Once the eggs are set I make sure that everything is loosened from the pan, lay my flour tortilla on top then my plate upside down and flip it. Slide the tortilla side back into the pan add more cheese fold the tortilla in half brown the first side, flip and brown the other side. It takes maybe 15 minutes to make. Fast and oh so good! Don't forget the hot sauce! 🤗👍
