Dry one just don't add the broth... You have dry noodles

Dry noodles: Quickly blanch the noodles in hot water. Put noodles in a bowl. Add soy sauce to taste to give color and a salty flavour. Add sugar to balance it out with some sweetness. Add a final few dashes of sesame oil for fragrance. Mix the noodles. Add some fresh coriander and spring onion. Add some fermented mustard and fried garlic with meat that you like and you are all done on the dry side. Soup is just a bowl of broth with some pork bones and fresh coriander and spring onions. Yummo

Bong, there are many Chinese and Vietnamese soups that use daikon, dried shrimp and pork. Hu tieu is one example and very similar to what yr wife made. I believe the origin of this noodle soup is Chinese from Chiuchow or Teochew. Cantonese and Fukien soups also use these ingredients.
