Stamina always depletes, there's nothing you can do to prevent that. But if you don't Sprint, Stamina will last much longer; so you can travel further. If you want to strategize around it, you can check on a player's Stamina before the play starts. Starting with less than their maximum means they Gas much faster; and you can play with the Auto-Sub In/Out values if you want to fine tune it even further. Getting to the endzone on a single play usually requires a combination of high Speed and maximum Stamina, with possibly a shorter route (Inside vs Outside run) so you spend less energy just getting to the line of scrimmage.
