I know what you're thinking... "I'm not a huge fan of herring" but this marinated herring is really good. Trust.
Korean style marinated herring will add a lot more flavor & a little kick to your Swedish holiday buffet, for sure. I'm really proud of this marinated herring recipe: I get to respect local customs and still get flavor packed eats... win, win. The taste of garlic, ginger, and spicy yet sweet chili flakes is a great way to liven things up, and it is not too spicy despite the chili flakes, so don't worry. This herring is great the traditional way as part of a holiday buffet or with steamed rice and fresh coriander. Visit your nearest Asian market for ingredients: they are worth buying since you can use them in many other dishes...

This was interesting! I found it because I had just made a sandwich with kimchi and marinated herring on white toast bread, with Miracle Whip. Sounds terrible but it was good. I've made kimchi a few years ago and it was good. This sounds good too.

Interesting recipe. Some Koreans do put fishes in the Kimchi and ferment them together. I've seen cod, flat fish and pollocks, some chop them to finger size pieces, some make them as big as size of a tuna can. Personally don't like the whole fish in them but it makes a good seafood base for whatever the recipe calls for Kimchi (soup and stew, mostly).

Thanks! I really love thinking about how marinades vs. brining vs. fermenting works for different things. I have not done too much of it - but if and when I get a large garden I will be geeking out! Any recipes, videos, or books you recommend welcome 🙏🏾

Well, kimchi kimchi is actually fermented so, adding raw fish to it already finished may be a little unsafe. But I imagine if you pickle the fish separately (find a good recipe online to do it safely) and then add it to the kimchi - that might be a good idea. Let me know what you end up doing!

Not sure about the jack mackerel but I've seen people putting cods, flatfish and pollocks. Don't think it would be a problem. Just a precaution though, the Kimchi becomes super fishy if you add too much fish guts along with it since Kimchi involves fermentation and it also brings up that... old fish smell along with it. If you are just using fillet/meat only, the fish smell wouldn't be so radical. Try a small batch first, I would say.
