I buy already picked whole herring from Russian markets... them I remove head and tail...rinse and cut into pieces...I ...don't remove skin as I make a mess of the fish

Those herrings are only babies and should be left alone to grow into decent size fish. What are you up to man?

Thank you, this is very helpful. We have lots of herring in UK, they're traditional here but smoked and not pickled.
