Pickled Ume (plum) should be one of the traditional and unique Japanese food. We used ripe ume from Wakayama where is famous for good Ume (Nankobai).

Ingredients
・10kg Ume Plum
・2kg Salt
・10L Water
・Shochu (Japanese Alcohol)
We bought Ume from the following shop.

ーRecipeー
1.Wash ume and remove stem from them.
2.Make 3% salt water (300g salt for 10L water) and put 1 into it to remove lye. Leave them for 2 hours.
3.Prepare 17% salt calculating from weight of Ume (1.7kg salt for 10kg Ume this time). Disinfect Ume and put salt on those (Have salt into parts where stem was). Put Ume into a barrel with the part where stem was on bottom.
4.Add the rest of salt into the barrel and weigh down. Leave for 1.5 months.

Why is there lye in the ume? Is that because of where you purchased it?

Can i change alcohol with wine or whiskey?

I think you'd better use vodka instead of wine or whiskey as wine or whiskey has strong flavor and could leave some flavor on plums!

Can I use medical alcohol 76% ?

I don't think you should do that. If it's not consumable. Then absolutely not.

We used alcohol to prevent from getting moldy as the salt concentration is a bit low. If you concerns about get moldy, I think it is better to add more salt, to make it 20% weight in total of Ume and then gently mix the ume and juice (ume vinegar) everyday! If you add more salt (20% weight of Ume) , it is going to be too salty when you eat. So soak ume into water before having and then it should be ok!
