Pickled Ume (plum) should be one of the traditional and unique Japanese food. This time, we added salted shiso (one of the Japanese herb) to ume we made the other day.

Ingredients
・210g Japanese Herb (Shiso)
・35g Salt (17% of Shiso)
・1kg Salted ume
・Ume vinegar
0:00 ーRecipe for Pickled Plum with Shisoー
0:28 1.Wash Shiso well and drain off water.
3:12 2.Add half amount of salt to Shiso and mix well to remove lye.
4:09 3.Add the rest of salt to Shiso again and mix. After extract come out, loosen leaves.
5;14 4.Add ume vinegar to 3 and mix.
5:44 5.Add ume and shiso to a bottle in order and add ume vinegar until all the ume get soaked. Leave for a month and a half.
