I found your channel yesterday and have been binge watching. Also downloaded a couple of recipe PDFs. I am not vegan, not even vegetarian but in the last 6 months or so, I have been feeling an undying urge to go for more plant-based meals and keep the other stuff as a once a week treat. Your channel is just the right kind of inspiration I needed. Thanks!

Oh I'm so happy to read this, Mousumee! Thanks so much for the lovely message. I hope you enjoy the recipes. There's no right way to become plant-based. Some people do it overnight and others prefer a slow transition. Take it at your pace. Wishing you all the success

I also open a window to clear the vapours and don't take the goggles off till I'm in another room or the vapours in the air will just make my eyes water. Also, if you want to batch chop a load with a food processor, raw onions can be easily frozen for future use. x

Hi Sadia! THANKS for sharing! I would like to share with you also two tips! First: in Brazil they LOVE garlic, so in any supermarket you can find bottles of chopped garlics in oil. It is good idea to keep the garlics in good conditions and taste. And also easier to use it! Second: I saw you cutting the carrots with a metal knife. And a ceramic knife is better because it not rust the vegetables and fruits. And make them keep in good conditions more time on the fridge!!! Namaste Guz from Córdoba, Argentina.

I found your channel after watching a very educational documentary called "What the Health". Growing up I have always been a very healthy eater, just to tell you my dad would pack my school lunch which included a giant red tomato. I'm not complaining, I loved eating my giant red tomatoes, I just wasn't one of the kids that others wanted to exchange their food with...lol. One of the things that stopped me from ever considering a plant-based diet is the misconception that athletes and bodybuilders couldn't get the proper gains if meats were not included in their diets. Thankfully, your channel is helping me see that a vegan lifestyle isn't as difficult as previously thought. My journey has begun with your informative channel. Thank you for making the transition that much easier.

i actually do have a tip & trick of my own, but i think you can say it is already covered in your other video - i love coriander (cilantro for americans), but i SUCK with plants, literally everything dies within days since i buy it if it's green coming to my house. SO, as a huge fan of tom ka ghai, i tried to figure out a way to both have coriander, lots of it, fresh for garnish, not only seeds and ground seeds, but also not have it dead by the time i finish the soup. i bought a bunch of cilantro and chopped it, packed it into plastic packets to store them on my freezer's door - perfect! now i can have a tonne of cilantro if i want, on anything i want, and not need to worry about it to die or wither. it's not AS nice as 100% fresh one, not nearly as aromatic, but the taste remains :)

Personal notes: Meal prepping 1. Peel and quarter onions, blend in food processor till coarsely chopped, high heat (use a little olive oil, if sticking to bottom of pan use water) cook to caramelize, pack in glass tiffin and store. (stores for 4 days in fridge, try to finish in 3) 2. Peel garlic, in tiffin. (stores for 1 week in fridge, try to finish in 6 days) 3. Soak legumes/pulses after rinsing, overnight. Cook beforehand. Lentils cook faster than beans, quinoa cooks faster than brown rice. (stores for 3 days in fridge, try to finish in 2) In glass tiffin. 4. Blend cooked chickpeas/beans to make hummus and store. (classic hummus stores for 5 days in fridge, try to finish in 4). Store in jar, tahini also in jar. 5. Cut and store veggies. (depends on vegetable, carrots 2 weeks raw, bell peppers 2 days raw, etc). Store in glass tiffins. 6. Peel super ripe bananas, quarter, cover with parchment paper to avoid sticking and put it in a freezer, store in box then freezer again (you can batch any fruit like this, duration depends on fruit) Store in glass tiffins. 7. Make granola. (Store in airtight jar for 3 weeks)

great tip, gotta try that! i usually quickly grab a few drops of dish soap to clean my fingers, and garlic/onion smellies go away. something i've often done is pre-mince my garlic (if you put in a head or two, there's enough for the food processor to do this nicely!), and then store it in an airtight container with a little olive oil drizzled over it, which keeps it fresh. lovely channel - great content, personality and presentation, thank you for the fantastic quality!

I love the way you format your videos! They're simple, well-edited and informative. I've been a vegetarian for almost a year now, and While I don't think it's that much more time consuming to be one (if anything we save time!), I know it takes some pre-planning to get the right types of foods in. As a student, it was overwhelming as the only one in my family, but prepping things in advance saves time as well. Thanks for these tips, definitely going to adopt them, especially the grain soaking.
