Learning to use fresh milled flour takes time and patience! I walk you through my basic recipe. Please note... I said 3/4 lb butter in the video. It is actually 1/2 lb or 2 sticks of butter.
240 - 260 grams fresh milled soft wheat flour
1 tsp salt
1/2 lb grated cold butter
7 (give or take) Tbsp ice cold water
Mix flour and butter together until it resembles small peas
Move all flour to one side of bowl
Add 1 Tbsp water at a time and gently roll flour and water to the other side of the bowl
Repeat until all flour and water are mixed
Be gentle and do not over water or over mix
Turn flour on to floured board and gently knead until it just comes together
Roll into shape, making sure to turn and flour so it doesn't stick
Move to pan and use as intended
