I’ll give you a tip I got from a very good cook. Dump everything from your food processor into a big ziploc or any other sturdy plastic bag. You work it through the plastic and let it rest in it when it comes together. Try it, 0 mess! It’s genius. I’ve been doing this with all my doughs for decades.

INGREDIENTS: -2 and 1/2 Cups of All Purpose Flour -1/4 cup of Sugar -1/2 a tsp of salt -1 cup of COLD cubes butter -3 tbsp of cold water STEPS: 1. combine in flour, sugar, and salt in food processor 2. add cubed COLD butter to processors and blend 3. slowly add cold water into processor and blend once more 4. pour mixture into a large ziplock bag and squeeze and need together 5. place in fridge for hour and then leave in room temperature for a few minutes 6. roll dough while continuing to add some flour to the top thank me later...

Hello John. I am a Japanese married to an american last Dec. I watch lots of KZbin everyday and learning how to make American dishes for my husband.. Watching your video, I made Apple Crumble Pie, Peanuts butter Chocolate chip cookie, Lemon cookie, cinnamon rolls and tonight I am baking Pumpkin Pie. This is the first time I’ve made a pie crust that didn’t make me want to cry. I don’t know if it’s your voice. I don’t know if it’s your well-put instructions. I don’t know if it’s the vodka. But last time I made pie crust I got so frustrated I literally threw the pie dough against the wall (not my finest moment). But this time was so pleasant and wonderful. @@praneetarao this is completely different from puff pastry. Puff pastry you don't mix the butter in with the dough, you put it in between and then fold the layers multiple times.

Instead of using vodka in the pie crust, I use apple brandy or calvados for my apple pies. Gives the crust a lovely apple flavor too! Try other fruit based liquors for fruit pies - Chambourd for berry pies for example.

A E because alcohol doesn’t soak into the flour then quickly evaporates out allowing you to have a wetter dough that comes together better but then the moisture evaporates out quickly leaving you with a flakier crust

I’ve made pie crust before but this recipe worked the best. I was hesitant about the vodka because I don’t like alcohol but I think adding it made a big difference. Your tips for forming the ring were great. My crust didn’t collapse which is what I’ve always hade a problem with. Kudos on the video and your channel.

So, every year I make strawberry pie for Easter and my family loves it. This year, due to Corona Virus, the market was completely out of pre-made pie crusts. 😱 So, I tries your crust because I had all the ingredients at home. I made this without a food processor and it is absolutely amazing. Most flaky pie I've ever tasted and I paired it with his apple pie filling recipe. Honestly heavenly. Although I've learned to use only around 50-60% of the sugar he uses to suit my own tastes.

@@kilroyscarnivalfl yes my daughter's assignment was to come up with a unique pie. So, her idea was to use the filling for Jamaican plantain tarts and change it up a bit. We omitted the red colouring, lessen the amount a sugar and add chunks of America green apples and a little shredded coconut; it was so yummy (I only had a little of filling, couldn't have the crust), her teacher loved it and she got full marks. I tried my hand at making homemade pie crusts last year, I made apple pies out of the apples from my neighbor's tree. I had a heck of a hard time rolling out my dough with it chilled, I'm not very strong, lol. I was literally shaking because of the rolling and trying not to let the butter get too warm and blend into the four dough. The crust still tasted sooo good even though it didn't get very flaky.

Sometimes when I have extra pieces of pie dough that’s raw..I will take like a tiny leaf cutter or a cookie cutter of whatever choice and bake those onto the top of a full piecrust it makes beautiful decoration especially on top of an apple pie or any crust… I just love piecrust LOL

I keep my flour in the freezer so that when I make pie crusts, biscuits, cookies or cornbread, the flour is cold and gives better results.

Keeping your flour and flour based foods (ex: pastas) in the freezer also prevents weevils.

I've been trying to make pie crusts by hand for a while now, they were always to thin and fell apart. I got so frustrated I threw a couple of them away! Then I tried your pie crust for Thanksgiving OMG it was easier, not frustrating at all, it tasted great and most importantly it was enough crust to actually fit the pie pan! In the past I've had to double recipes just to get a single layer. This is sooooo much better! Thank you!

I wish I had watched your videos back during the holidays 😂 I was just starting baking and made a pie dough using my brand new food processor for the first time. I went to mix up the already crumbly dough with my FINGERS and wasn't watching how fast I was doing it, and I sliced the tip of my right ring finger ALMOST off!! I work my pastry dough in between two layers of plastic wrap and it is super easy, does not crack and you can make a thin layer without any mess!

Thanks for this great recipe! I modified this slightly with the addition of 1/2 cup graham flour. The dough did not hold together in nice clumps, as it would have without but was still rollable. The result was flakier and the subtle graham flavor was nice with fruit pies. Next I'll see how a bit of wheat germ works out. Once again, thanks John! I'm so enjoying this!

I came CLOSE this time though so kudos to you. Everything looked great and like yours up until the bake Best guess, I rolled the crust too thin. I burned it during the bake. I even checked early to be careful but I'm guessing I rolled it a lot thinner than I should have. Still, I'm close and trying again today so I appreciate you efforts and this recipe. Not sure if you got a response. I’m doing a peach cobbler today and in the past I’ve baked the crust with the pie, this time I will be partially baking it prior and then letting it finish with the filling. This will make it more sturdy and more flaky. Usually when I make pies the crust at the bottom is gooey.

NGREDIENTS (metric): - 315 grams of All Purpose Flour - 50 grams of Sugar -1/2 a tsp of salt - 250 grams of COLD cubes butter -3 tbsp of cold water STEPS: 1. combine in flour, sugar, and salt in food processor 2. add cubed COLD butter to processors and blend 3. slowly add cold water into processor and blend once more 4. pour mixture into a large ziplock bag and squeeze and need together 5. place in fridge for hour and then leave in room temperature for a few minutes 6. roll dough while continuing to add some flour to the top

I made this 100% the way he did. The custard filling is honestly amazing. My first pie ever. I used his butter crust recipe. The only difference was I sprinkled chocolate shavings and Nilla wafers on top. 😋 he’s my favorite
