Definitely in both. If you use a grill,just cook using indirect heat.

This is the first time I've heard of big shots, and I am going to try it next weekend. I am in Michigan and it will be below freezing temperatures and it is a lot of work to keep the heat up but this is most definitely worth it.

Prep them on a wire rack and just put the whole thing on the smoker.. Easy on and off. No flare ups.

@@Armadillopepper It was amazing. Everyone I gave it to was super impressed. I soaked 4 peppers in it. But only blended one in it so it was still edible. Saved some of the cherries and the other reapers and chocolate coated them. Delicious! Seriously.. thank you. Was amazing. Making the sausages right now. I put the toothpick in 1st almost all the way through.. connect bacon and wrap... then push it through. They are cooking now!

I plan on making this as they look great, but I have two questions for you. First why do you leave the hanging rods in the cooker if you are not going to use them? It looks like they just get in the way. Secondly, how important is it to preheat your grate? I know for baking most recipes look key preheated racks. I think it would just be easier to place the rack in after you put the food on it. Loved the video.

Good questions. If you don't put the rods in, there is more air flow through this cooker and the temp increases. Learned that the hard way. Next time I make this, I'll use a wire rack or do what you suggested. You can always use a little vegetable spray.

I like your answer but have you thought of leaving the rods out and covering the holes with the miracle invention of duct tape? You could use a small piece and cover the hole from the inside or carve down a wine cork to plug the holes. Just a thought and a good reason to open four bottles of wine.
