On November 15th, 2017, I shared my first recipe on KZbin! It was a lamb pilau recipe with a chunky salsa (Kachimbari).
Pilau is to East Africa, what Jollof is to west Africa. It is a hearty, flavor loaded party style rice dish, prepared with warm, welcoming, and aromatic spices. Inspired originally by Indian cuisine.
I’ve been privileged to be the wife of an incredible Tanzanian man, who’s culture and cuisine, I’ve explored, and embraced!
Today, I present an upgraded version of the lamb pilau recipe, as a throwback to our humble beginnings! It is my wish to continue to have a healthy connection with the beginning of this journey, in which, I’ve been endowed with so many lessons, that have contributed in shaping, and amplifying who I truly am! A happy West African girl, who loves great food!
With much love, and gratitude, I’d like us to celebrate all of our wins and embrace all the lessons learned with this video. Please enjoy and continue to have fun, especially, in that kitchen! ❤️
INGREDIENTS:
Pilau Masala ingredients:
1/2 tsp cardamom pods
1/2 tsp cumin seeds
3 star anise
1 tsp coriander seeds
1/2 tsp aniseed
3 cinnamon sticks (substitute with 1/2 tsp cinnamon powder)
** You may add 5 cloves to the masala. I chose to hold back on adding cloves this time due to its potential overpowering nature **
Rest of Pilau ingredients:
* 1/2 cup pine nuts toasted
* 1/2 cup raisins
* 6 Serrano chilis thinly sliced (optional)
* 12 cloves garlic thinly sliced
* 4 large onions thinly sliced
* 12 cups jasmine rice(substitute with your favorite long grain rice)
* 18 oz broth (chicken or beef, or combination of both)
* 2 tsp all purpose seasoning ( substitute with 2 chicken or beef bouillon cubes)
* Salt and pepper to taste
* 5 Lbs lamb chops
* 4 tbsp ghee
* 1 cup vegetable oil
* 2-4 cups water (enough water to cover entire rice grains)
INGREDIENTS FOR KACHUMBAI (chunky salsa):
* 3 large tomatoes seeded and sliced
* 2 Serrano or jalapeño chilis seeded and chopped
* 1 red or green bell pepper chopped or sliced
* half a large onion sliced or chopped and soaked in a solution of 2 tbsp of vinegar and 1 cup water, for 5 mins, and drained. This creates a sweetened, mild pickled effect that’s quite refreshing.
* salt and pepper to taste
* juice of half a lime or lemon
* 1 tsp red wine vinegar (optional)

Onuawaa, I’ve never had pilau but I would burry my face in this pot of deliciousness and that lamb “enam” de3 you know what my squad and I would do to this! I really ought to try this recipe! You must have had "Jollof Rice", it is one type of pilau. Pilau is basically rice cooked with meat, so Spanish Paella, Chinese fried rice are all pilaus'.

So glad I came across this video. We have that here in Caribbean (Trinidad and Tobago). But we spell it "Pelau" and we do it a bit different. It obviously came here with our ancestors who came over from Africa. We most do it with chicken. Pease and carrot Coconut milk and the fresh seasoning too. And we have Cole slaw on the side most times. Sometimes potato salad. Really appreciate this video. Love from the sister isle.

I appreciate the transparency of your cooking recipes. I'm Liberian and my husband is Ghanaian. I have watched other people cook traditional african food. Seems like they purposely leave ingredients out so people who are not from the culture will not have all the secrets to the traditional dishes. There are certain traditional Liberian food I do not know how to prepare and my own family will not show me. I had spent some time in Ghana. I have watched your youtube channel for awhile. I noticed you actually provide full disclosure of all necessary ingredients when preparing your traditional food. This encourages me to try to cook more traditional food for my husband since he prefers his traditional food more than American food. I had been feeling frustrated with my family not willing to show me how to prepare good traditional food. 😄 I'm happy I have found your channel! May God continue to bless you🌹

Oh my goodness I am from Trinidad and Tobago and we make Pelau. Pigeon peas, lentil peas, chicken and pigtail. We do use raisins sometimes. However it is flavoured different. But its so great to know the origin of this dish. Thank you.

Seasoning makes a whole lot of difference. You are cooking and making my mouth water with all the sweet words. Wow!!🤤🤤 I do add vinegar and pinch of salt in my onion too and it takes that smell away. Omg! That beef colour shouted my name. Sis i heard it oo. Soft and Tender. Infact my Kenyan Friends Will be so exceptionally happy with you🤣 This Pilau attended Harvard Uni and came out with A - First class. Love the Rice appearance after 25 minutes with Raisins and beef adds. Welldone my dear sis.❤️❤️🍓🍓🍓

Awesome only that in Kenya we never put in nuts and pines. And kachumbari is Kenyan salad also but we like it in small cuttings. The pilau is cooked together with the meat we never remove the meat or chicken to add on top later but its a beautiful twist. In the kachumbari we put coriander in swahili dhania. The fruit we eat after eaten pilau is a ripe banana.

So I’m minding my business this afternoon watching this clip, and my daughter walked into my room, took one look at the dish and said, “mama, you have to cook this meal for me”. Well needless to say, I have all the ingredients in my kitchen, so off to the kitchen I went. Just finished the meal and baby girl is happy and enjoying her dinner. Hmmm, things that we do for our children. 😇😇😇

He just came back home from college and one of his friends wanted to come over for thanksgiving, but the dish my son requested had sea food in it and his friend doesn't eat sea food.
