It's not a new concept. If you look at pepperhead forums and videos, when they review a sweet hot sauce/salsa, they smoetimes reccommend using it on ice cream.

I also appreciate you always remind the viewer that most ingredients are flexible and scaleable to taste,,,but also highlight when a specific ingredient is non-negotiable. Thank you for a simple recipe using a basic canned item. Much cheaper and easier for people like me that are single and living in an area that doesn't have fresh pineapples except once a year. For anyone that RVs a stick blender is a must-have item. So useful and doesn't take up much space, easy to clean! Traditional Pineapple Salsa bowl, hehehe Chef!

In the eleven years I follow chef John - with his inflection that sounds like he comes from the South of The Netherlands or Flanders - have I ever made something of his that wasn't worth repetition or have I disagreed with him on anything. Until l today when I must say - that in my personal and humble opinion - that the most friendly of herbs and spices for pineapple is not mint but ... allspice. Which is an opinion in no way enforced by my native pallet and thus must - ironically - come from somewhere on this channel. Luckily I have mint and a can off pineapple at home and ... give me a minute ... yeah, they do go great together. Chef John - as always - you are the muse of what herb or spice to use.

Just made this and OMG 1/4 cup is Wayyyyyyyy too much of Sriracha. I only used two table spoons and the next time I make this will only use one teaspoon! I also may try a little dash of liquid smoke to this too. I would give it 4 stars, as it was very flavorful and will make this again, soon :) Thank you Chef.

Chef, on the subject of a roasted beet salsa, it's very good to do a variation of a classic horseradish beet relish where you temper the heat of the horseradish by charring the horseradish as well as the beet before mixing up your sauce. I like to spike mine with a little tamarind to bring a little bit of sour to the sauce.

I think I might reserve half the pineapple. And then after it is blended chop it down the reserved pineapple to about 3/8ths inch pieces and then stir it in. Maybe some of the onion as well
