Right from the beginning when I saw that cake, I liked it very much because of its beautiful shape and fragrant almond kernel, so I tried to make it right. The way to make this pink cookie is not too difficult, just invert sugar water to keep the crust soft, beautiful color after baking. Pink biscuits are called cookies but I think it's more like mooncakes. Fresh out of the oven, it is crispy, after two days of color fading, the pink cookie crust will soften, the color is more beautiful and softer. - A little bit of salt

Here I have a little trick when adding a little baking soda to it, my lotus seeds will be softer, saving more cooking time.

** Crust:
- 100 grams of flour number 8
-75 grams of inverted sugar water
- 25 grams of cooking oil
- 5 grams of matcha powder
- 4 grams of baking soda
- Food coloring.
When mixing the crust, everyone should pay attention to mixing the color slowly to get the desired color.

Divide the filling and crust according to the ratio:
- Cake shell 20 grams (17 grams of shell + 3 grams of green fruit stem)
- Cake filling: 30 grams

I bake the cake at 150 degrees Celsius for 30 minutes, the crust is very thin so it will cook quickly, don't bake the heat too high, it will lose the color of the cake and the cake will crack easily.
