Recently pulled one of four SG14s out of service for a day. Ecolab grease strip, hot water pressure wash, changed both limit and thermostat, pulled the baffles etc, looked great, fired up and ran. Feeling pretty good! My regular hotside guy came around a few days later for other equipment issues, "harumphed" a few times then said, "hey dumbass, why is your pilot so weak? You cleaned all the other stuff but didn't clear the pilot orifice!" That's why I happily sign his tickets and push them thru for expedited payment. Stay humble.

Great info on the wiring, I’m not sure I’ve ever seen one wired to kill the pilot but I can see how that would make sense.

If the wire from the temperature probes are touching the burner should they be bent so they are not?

No. I’ve never used any. I know some folks will say otherwise but I’ve never had leaking issues. Anything you use would have to be good grade given where it’s located. Not safe.

Little late but I will chime in. Most fryer manuals (Dean, Imperial) state to use Loctite PST-567 on the pass through nut threads. Would it hurt to use? No. Necessary? Depends on the fitment after removing it. Use best judgement. Also, concerning the wiring, some older style high-limit switches have 2 contacts screws for normally open or closed, therefore, one can wire the NC in series with the thermostat and not pull power from the PP if all that is available the TP, TH, TH/TP on your gas valve. Keep 'er fryin'!

Any advantage or disadvantage to using degreaser or solvent and or hot water or steam to clean out that mess? Or even just contact cleaner on the valve terminals?

Nope….. NFPA (national fire protection act) standards are that every fryer must be physically cleaned and “excess combustibles removed” annually at a minimum. Just nobody does. I have a steamer that does a good job and with the Millville systems I don’t have to worry about electronic damage.

I have run into a couple times a fryer that when turning the thermostat on the pilot drops out. Doesn't really make sense to me.

It can be wired incorrectly so that when the thermostat satisfies it severs the pilot circuit. Just a wiring correction needed

@@vtutt021 purpose of the high limit is to prevent catastrophic events. The surest way to do that is to have it drop out the source if flame period. It also helps remotely when you know the pilot just won’t stay lint that you have a limit issue.
