I do my brisket on average of about 14 hours, this brisket is underperforming for €1000!!!!!!!!

Fun to watch, looked amazing! But have to say adding some coarse pepper to the rub and building up some bark on the beautiful Wagyu brisket would have been something to write home about. Also prob didn’t even need to wrap due to the marbling and fat content. Just add a tray to catch any of the liquid gold. When you drank the fat straight up was the highlight of this vid 😆

im pretty sure the reason why he didnt do a texas style brisket salt and pepper rub is because the pepper would detract from the much more heavily marbled A5 wagyu beef flavor. this cut doesnt need anything but salt, even the smoke is somewhat distracting and i think he did this just for the video.

If they didn't wrap it, I rekon it would've taken them 24+ hours to cook for that hunk of meat. But agree they could've left it longer for a better crust.

Idea to make a video to show how you keep your bbq on temp? like do you still add cole during the process? do you move them, most of the time you say in the beginning what zones you make and how open the vent is, but what after that

By the time a good bark would build up on it, it would mostly dry out. Or it would become so tender that it would quite literally melt. Edit: But you have to admit either way it would taste great.

I was saying it "could" dry out on account every drop of fat would melt off and be floating in a drip pan below it (taking a lot of moisture with it). That or it would be come so tender that it would fall through the grates. Edit: And I am taking in regards of 12+ hours of low and slow.

Wagyu is not really brisket material if you tried to put bark on it the thing would just fall apart, literally disintegrate. The fat melts at your hands temperature.

I agree. Offset and I would have put black pepper and made sure I had a bark as well. Pellets just can't give the strong smoke flavor I like.

This is getting out of hand. The origin of bbq brisket was needing to cook a tough piece of meat low and slow to get good flavor. This feels wrong.

You got to season with the basics - SPG- salt, pepper & granulated garlic! And definitely needed more smoke time for a better smoke ring. But I’d rather have mine be almost falling apart. Instead of contest way. Me a buddy cooked a waygu for a bbq competition once, it tasted amazing, but had to turn in a regular one, cause the waygu fell apart. Lol also the color was more red than regular one.

Now you're playing with my kinda meat! Great looking brisket and solid cook. Believe it or not, the fat in Wagyu beef is really high in Omega 3 & 6 fatty acids (higher than salmon), you just took a drink 🍸 of fat and added 30 years to your life.

It’s like putting expensive whisky on ice.... wait nvm the best way to drink whisky is the way you like to drink it, much like an expensive piece of meat. The beat way to smoke it is the way you like to smoke it. Imho I would have done it on a pellet smoker as well. It has less variables to go wrong, especially with the meat costing the same as a winter beater.
