how is Z1-Z3=Zm? Points (3) and (4) are not on the same line.

We ignore the small difference in elevation between points (3) and (4), this is a valid assumption since pitot tubes have small diameters, and for all practical purposes, the elevation difference between (3) and (4) is much smaller than for example between (3) and (5) or (4) and (7).
