Hey David, the dough isn't raw in the middle. Puff pastry is made out of many layers. If you roll it out and press it together like you did the layers will be pushed and glued together. So the dough can't expand to its full size. Hope that was helpful :)

Sarah Dtmr As Al Funcoot says, if the dough is too warm and you press/roll it, then yeah the butter in the dough that makes the wavy layers separate might have gotten "mixed up in the dough again" Else another theory could be that the oven wasn't hot enough for the dough, which would result in the butter melting and seeping out of the dough instead of being in the dough while the dough is being crisped which is actually what makes the layers. Trust me, I know my puff pastry doughs - trust the Danish person that comes from the land of butter, puff pastry and cream cakes :D

Puff pastry has to be cooked at a high temperature quickly. The reason it puffs is the butter melts and turns to steam puffing the layers. Also the puff pastry must be super cold when you put it into the oven. If it's warm or room temperature it won't rise.

To help your pastry puff cook completely, roll it thinner than you do and make sure it is a cold as possible before cooking it. Puff pastry does not have any yeast in it so it doesn't rise like bread would, it uses steam to rise. If you make sure it is a cold as possible before cooking it, the coldness will produce more steam when cooking and help the layers separate and cook. ( also a little side note,: putting egg on top will make the top look browned/ burned even with the inside still being raw.)

You can roll puff pastry but it's *pretty* delicate. You have to be quick and work in short sessions because otherwise if the dough gets too warm the butter melt and it wont puff int he oven. And yet you still have to keep a light touch in order not to mush everything together (and judging from the footage, even if it is sped up, I'd say he seems to have rolled pretty hard).

If you do the pizza braid again, try making the cheese and pepperoni strip narrower so that your side strips are longer and you can fuse them together and get an actual braid

I just made the pizza braid and it came out awesome. I just used the marinara sauce instead of the pepperoni. And on 180 C in the oven came out puffy and perfect.

My culinary teacher said if theres a wet dough in the middle of danish pastry, croisant or puff pastry, it depends on the oven, for the great result he suggest using a fogg oven (i dunno what is called) so is like an oven but theres a water place to fog the pastry...

The puff pastry isn't raw inside, its moist. If you fear that it is still raw, you can cook it for longer time on a lower heat and make sure your oven is well preheated

I tried a similar recipe, it was a chicken pot pie braid. Instead of puff pastry it used biscuit dough. Maybe using some biscuit dough or thin pizza dough will make it turn out better?

never follow the instructions on the box for puff pastry , it needs to be baked for twice as long with half the temperature setting ,then it puffs up beautifully without any raw interior

A pastry has no leavening. Dough has a leavening agent usually yeast. Quick bread and muffins are pretty much cakes. Puff pastry is not very tasty, at least not the stuff you get in the frozen section. Also in order for it to get done, roll it out to 1/8in thick and then cut out the shape and size you need.

I have a feeling that the dough was kinda raw inside because it was 'too thick' - of course if you were going to stretch it more you would probably end up with it being thin, burned and falling apart all over the place. But that's just a 'feature' of this dough.
