Central Milling also has Tony Gemignani's 00 dough and it's terrific - I also use a sourdough starter and a poolish and do a 3-day dough, I always put containers in the fridge in measured balls, then let them rest 3 hours before making pizza - I also use my steel on the top level oven - preheat oven to 450 then turn on the broiler and takes 3 minutes for a perfectly done pizza. (Tony Gemignani also recommends your Baking Steels for pizza - that's where I heard about it :-)

Love your strategy Gary. Right on the money. Tony is amazing. We've been friends for a few years, his pizza is off the charts. He is even a better person. I really enjoy anytime i get to spend with him... Andris

Great video, a few aha moments. So your preferred oven temp is 450 F? Basically, you preheat it at 450 for, say 45 minutes. Once you slide in the pizza, you turn it to broiler. Once you get to the 2 minute mark , you switch it to 450 and bake it until ready? Thanks in advance!

Just about right. I wait for the broiler to kick on before i launch. I will wait until is see that broiler RED HOT. Literally.. Then i launch.

on a RecTeq Grill it get so hot i have to set the temp at 380 for 4 minutes.

I made the 72 hr dough and only used 2 of the 3 balls. I put the 1 dough ball in the freezer hoping it would be ok. What/how should I bake the last pizza? Should I let it thaw in the fridge and then let it come to room temp before saucing it up and bake ?

Great question. Thawing overnight in the fridge is a good way. Otherwise, remove it and let it rest at room temp for a few hours. That will also work.. I hope the dough was amazing... andris

Does it matter if your oven doesnt have the convection option?

Not at all. Just wont have that option. Without convection it may take a little longer to bake. Just be mindful of that.
