People DO call American Cheese slices "Plastic Cheese" When I heard that for the first time, it was a cooking video from Australia, they described the cheese slice as Plastic Cheese I was like "Yeah that seems about right"

Legally, even in the US, Kraft (and Velveeta) cannot call itself cheese, if you read the packaging, it is called “processed cheese product”

Early on the idea of chemically processed food was considered a positive, keep in mind this was in an era where if you bought a loaf of bread there was a good chance it co ta8ned a non trivial amount of 'filler' like sawdust, or just....dirt. So modern food made through modern processes were the hot thing, the cookies that Oreo ripped off and almost totally replaces were called Hydrox cookies. Because 'Hydrox' gave the impression of a modern cookie made through modern chemical.... stuff.... its also important to remember that much of what we consider to be traditional quality food was either exceedingly rare and expensive at some point or is really quite modern and in its own way as dependant on modern processes as the much maligned processed food. The truth is you don't feed 8 billion people by doing things the way they did back when earth had less than 1 billion mouths.

I'm not joking (entirely). American cheese is older cheeses "glued" together with emulsifiers. It was originated as a thrift way to make cheese before WWI, and then as a way to better leverage foodstocks during the war. It's literally a food designed not to degrade/chemically breakdown. There's research being done on the emulsifiers used in that they etch away the mucus layer on the intestines (in animals at least), which might be the cause of IBS, gluten sensitivities, and a number of other allergens.
