Wise man once said to me if you have to bend to clear your side arm holster as you have vest pouches in the way. You are wasting time as you have to bend to draw and then recenter. Is that true? As I see people doing this type of talks and they all seem to be wide as hell.

Bending at the waist isn't a problem. However, it's best to keep the strong side of your cumberbund clear/slick so it does not interfere with your draw stroke. If you have pouches in the way, it not only changes your mechanics of the draw, but there's a good chance that your sidearm can be knocked from your hands if you hit a pouch.
