I have been making marzipan since many years now using various recipes But this one turned to be the best The first batch turned a bit sticky so for the next one I used a little less water and got the pan off the stove in time The idea of using the silicone mat to knead is the best one yet. Small request Wendy, could you kindly show us how to cover fruit cake with marzipan(wedding cake) and royal icing, it's my favourite. Nowadays in Goa everyone is doing fancy cakes, either home made or from the cake shops. For my wedding we had a fruit cake covered with marzipan. Same here.. I've taken it out into a steel dish to cool down, and it's still sticky after 25 minutes 🙈 UPDATE: I tried adding powdered sugar a little at a time to absorb the excess moisture and mixed it. Much better now 😅

💙💙💙💙💙 hi Wendy. We need some help. The first batch of marzipan has come out like “Oh My Goodness. Look At That …… Uuum “ but we wanted to know if we want to make a bigger quantity, should we just double the ingredients (to me I feel some can be but some need yr expertise measures). Secondly how was yr paste white. Caroline’s has a grayish look. Lastly can she pour the mixture on the silicon mat and tease it like she did for the milkcream. Sorry to bother u but all the sweets she tried fro yr recipies being a 🥰 to our face. God Bless U immensely. Looking forward to yr advice

For a double batch you should double the recipe. It could look grey when the sugar melts but it will whiten up when it solidifies. Yes you can put it in a silicon mat and cool it down. Hope you are enjoying making you Christmas sweets🥰🎄

@@elizabethchiramel8372 No Elizabeth, these are silicon molds that don’t need any greasing. They work like magic if your marzipan is prepared right. I just inverted the mold and gave it a light tap on the back. They will automatically drop from the mold.
