Oh these are adorable! Never realised they were so easy to make. One query - why are we using icing sugar & not granulated sugar? Icing/confectioner's sugar has a little bit of cornflour, right? Does that help in binding the mixture together?

Hi Roshni, yes, you’re right that icing sugar has cornstarch added. This helps the marzipan harden and keeps them safe to store at room temperature for a little longer than regular powdered sugar as the starch dries out any excess moisture. You can do it with normal sugar too; but I’d recommend refrigerating it after a week or so 🤗

Maam i just ground the almonds icing sugar along with almond essence&2 tsp water. They r become very soft can't make it in the mold what is to be done pls help me. I am 72 yrs old I will get a shout. Pls pls help me.

Okay, Martha, don’t worry! First, check if you’ve used enough icing sugar, since for mould-pressed marzipans you’d need a firmer dough to help keep the shape. Use a plastic dough scraper or silicone spatula to shape up the dough ball. Add the colour; as I said when you mix the colour it will get sticky. Roll it into a ball, and wash your hands. If you find it too sticky, cling wrap it, and refrigerate till it’s a bit firm. After half an hour, knead the firm dough a little and mould it/or press it in the mould. Let them air-dry well before storing. Hope this helps💫

Hello Geraldyne🤗 For Cashews, you can skip the soaking step, and directly being by grinding it with icing sugar. If, however, you think the cashew nuts need a bit of a wash, then you can just rinse them under cool water and then pat them dry. They must be completely dry before adding it to the mixer, or you may not get a good, fine powder. Hope this helps✨❤️

It’s preferable to use icing sugar for marzipan. If you’re using normal sugar, you’ll have to use grams measurements (because 1 cup granulated sugar is about 200 grams; we need only 100 grams of powder sugar). Grind the sugar, then add the cashews, and additional 1 teaspoon of Cornstarch (Icing Sugar= normal powder sugar + Cornstarch).
