Maybe you can try what I did: six Klawf sticks and four curry powder. I'll try doing another mono-ingredient sandwich next time to confirm if using too many duplicate ingredient really is the key to get 1-star sandwich

I love yet also hate how you can get the purple waves just because the ingredients weren't assembled right, even if you're following a recipe. Also, if you want your Pokemon to make lots of Eggs, the Great Peanut Butter Sandwich is probably the cheapest means of getting Egg Power Lv2, as well as the easiest to assemble.

It seems that to get a 1-star sandwich, you habe to use multiple servings of a single ingredient. For example, multiple servings of strawberries only, or multiple servings of cheese only. My first ever 1-star sandwich was six servings of Klawf Sticks and four curry powder, so I think it's a valid guess.

In the DLC, if you leave out at least one ingredient in the spicy sandwich you make for Crispin's trial, he'll give the bad reaction after he eats it. I guess his palate is so refined that only perfectly-made sandwiches will please him!
