Can anyone explain why her UMD move does so much if it’s a physical attack? I know the seed makes wonder room which makes physical defense swap with special defense, but why does it do so much to everything?

UMD uses the special defense stat, that is why.

From the Pokemon Seller in Carotos, but it might not be available to you anymore if you already bought them all in V12 and continued the save file from there. Alternatively you could use a Sawk/Sudowoodo with Sturdy+Counter or Debug Mode. A perfect speed IV timid Gengar/Froslass can also outspeed.
