I have a question since other VGC Poketubers never answered me but does Pokemon Scarlet/Violet have Ranked WIFI battles or is it just casual battles like BDSP have?

At the moment it is just casual battles. Ranked Battles will be releasing soon. I've heard as early as December and as late as February, so sometime between those months

How is the EV/IV/EggMove method in this game? Is it tedious?

I would say it decently tedious. The game does give access to power items early which helps. Also you can set a picnic in most open areas to streamline the breeding process. Still a lot to dive into for sure!
