Today Mike and I are making traditional and very easy Polish dinner Beef Meatballs in Dill Sauce (aka Klopsiki w Sosie Koperkowym) with Mashed Potato Pancakes and Carrot Coleslaw, the way my grandma used to make.
Ahhh.... The taste of childhood.... I couldn't wait to make the Klopsiki... It's been years since I had this dinner at my grandma Roma's home. I would stop by her house from time to time and have a quick lunch, which used to be the biggest meal of the day in Poland, usually served between 1pm-5pm, depending on the household, it was the equivalent of dinner time.
Roma would make those meatballs for my grandpa, who couldn't eat anything fried. She would make them from ground beef, pork or chicken. Usually she would serve them with mashed potatoes or kopytka (potato dumplings, which recipe you can watch here • Authentic Polish Potat... ). Most of the time she would make surówka or sałatka which is a salad or fresh vegetable coleslaw (it also would be great with sauerkraut coleslaw, which you can find the recipe in this episode • How to make Polish Zra... )

✴ Ingredients for the Klopsiki aka Beef Meatballs:
1 lb ground beef
1 soaked in water or milk slice of bread
1/2 small onion chopped
1 egg
salt and pepper to taste
The sauce:
1/2 cup sour cream
4 tablespoon flour
4 cups of beef broth (or water, but remember to season it) or use a bouillon cube
1/2 cup water
1 lage bayleaf
5 peppercorns
salt and pepper to taste
*This recipe is great with 2 cloves of garlic minced instead of onion, if the onion is not your thing.
**To get the best tasting klopsik / meatballs, I would suggest making them the day ahead, so all the flavors have time to combine.
✴ For Mashed Potato Pancakes (Placki / Krokiety Ziemniaczane)
1/2 chopped onion sauteed in 1 lbs butter
2 cups mashed potatoes best leftovers from a fridge (I make mine with salt, sour cream and butter, they should be on dryer side)
1/3 cup of flour
1 egg
cracked black pepper and salt to taste
plain bread crumbs
oil for frying
✴ For Carrot Coleslaw:
3 large carrots shredded
1 medium apple shredded
1/2 lemon (juice)
2 tablespoons sour cream
2 tablespoons mayonnaise
sugar, salt, pepper to taste
*This recipe can be made with olive oil instead of mayonnaise and sour cream
