What angle do I sharpen an Opinel knife?
@manifestgtr
@manifestgtr 3 жыл бұрын
Low…I usually sharpen my opinels where the spine is sticking up no more than a couple of pennies, maybe a couple millimeters in metric. Opinels are all about taking advantage of their incredible cutting geometry, imo…so I lean into that. If you can get a hair whittling edge on an Opinel, it’s gonna last a while based on the blade’s shape, alone.

Many people seem to not know this, but Opinels are convex from spine to edge. I lay mine completely flat on the stone and rock them to follow the natural curvature of the convex grind.

I got rsi hands just by looking at this. I have a #8 Inox opinel which some douchebag has used to cut clothinglines with. Little did he know that clothinglines are reinforced with a steel wire core. I tried to sharpen in on my oilstone and that helped a bit but there are real deep dents in the blade. Might just buy a new one. 🙁

Re-grind the edge on coarse grits like 120-200-300 until the dents are gone. And then sharpen the knife again 😉

Very sharp - nice job. What was the reason for polishing off the patina?
@loqmanhakim3198
@loqmanhakim3198 5 жыл бұрын
Well the knife is stainless steel and the surface was a bit rusted here and there. My client asked me to make it into mirror polish surface so i made for him😁

loqman hakim Like I said, very nice job. At 12 or 14 dollars for a new one, I’m sure he paid a lot more for your beautiful work. I enjoy getting an old carbon blade, and wondering about where it’s been and what it’s done to get its patina. It’s kind of funny to me to see people trying to force a patina with boiling vinegar and the like. Use the knife, and the patina will naturally follow.... I think your work left that knife so sharp that you could cut something just by presenting the blade to it.😆

Joseph Pepe Castillo thank you very much for the compliment. Maybe some people do force patina to avoid them taking so much attention on caring their knife😁😁 But im always let the patina build naturally as the pattern appeared amazingly beautiful rather than forcing them

All I have is the opinel sharpener but cannot get the blade sharp. Any suggestions?
@loqmanhakim3198
@loqmanhakim3198 5 жыл бұрын
Is your opinel sharpener small whetstone or the honing steel? It might be your angle of sharpening is too high or you does not remove the burr completely. And another thing is to invest with some other good stones since opinel is a good knife maker not the whetstone.🙂
